Gazpacho Andaluz ( Mama's Recipe)
- 30 g slightly stale bread, torn into pieces
- 60 g Spanish Sherry Vinegar, (or use white vinegar)
- 1 Lebanese cucumber peeled and roughly chopped
- 3 clove garlic peeled
- 1 red capsicum, cut into pieces
- 20 g extra virgin olive oil
- 250 g tomatoes, ripe , peeled, (approx. 2)
- 230 g chilled water
- 2 tsp salt, Adjust to taste
- 100 g ice cubes

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

- add all ingredients to "Closed lid" blend 30 seconds sp5
adjust seasoning to taste
serve & garnish with finely diced cucumber and tomato - For a smoother texture blend a further 30seconds on sp 7

Tip
To peel tomatoes - prick the tomatoes with fork and pour boiling water over tomatoes in a heat proof bowl with the tip of a paring knife lift skin and the whole skin should peel off

Montsyubero: hi Montsyubero.....you've read it right, I know a lot of other recipies calls for 1000g. My mum only uses one or two very ripped tomatoes (but not tinned), I have used 2 with mine. Will be interested to see what you think!
