  • 3 eggs
  • 1/4 teaspoon salt
  • 245 grams Gluten free all purpose flour
  • 3/4 teaspoon xanthan gum
  • 35 grams tapioca flour

Recipe's preparation

  1. Put egg, salt and water into bowl. Put lid and measuring cup on and mix 4 sec, speed 4.
  2. Add flour, xanthan gum and tapioca flour. Mix for 2 minutes on dough setting.
  3. Transfer onto bench sprinkled with cornflour and knead into a ball. Wrap in glad wrap tightly and let sit for 10 minutes.
  4. Divide mixture into three. Wrap two balls of dough and place one ball of dough onto floured bench and roll into a square about half a centimeter thick with a rolling pin.

    Using a pizza cutter, cut into 3 inch squares. Take each individual square and roll out into a thin layer that you can see your fingers through. Continue until you have made all dough into thin squares.
  5. Take a square, place 1-2 teaspoons of preferred dumpling fill (I use a chicken dumpling recipe from the recipe community, just make sure all ingredients are gluten free). Wet each edge with water and join each points together and squeeze together just above mixture to make a money bag shape.
  6. Place dumplings on greased varamoa tray and steam 10-12 mins, Varoma, speed 2 until mixture has cooked.

    Serve immediately with dipping sauce of choice or gluten free soy sauce.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Thank you for posting this recipe. The dough was easy to work with and was very close to a gluten dough. It’s a keeper recipe. Enjoyed by the whole family.

    Tried these the other night and the dough was wonderful to work with!

    They cooked wonderfully in the wonton soup. Really happy and impressed with this recipe! It is now my to go to for wontons and even going to try it as a pasta as well.
