Zucchini Fritters thanks to my friend Ann

Ingredients

15 piece(s)

  • 30 grams Parmesan cheese, chopped into 2cm blocks
  • 45 grams Self Raising Flour
  • 4 eggs
  • 2 Zucchinis, roughly chopped
  • 1 tablespoon salt

Recipe's preparation

    Method
  1. Grate parmesan cheese 10 seconds, speed 9. Set aside.

     

    Place roughly chopped zucchini into bowl, chop 2 seconds, speed 5.

     

    Place chopped zucchini into TM basket and sprinkle with 1 tsp salt. Set aside over sink or bowl for 20 mins. Afterwards, squeeze as much liquid as possible out of the zucchini (either use spatula to press against side of TM basket, or squeeze zucchini in your hands to remove liquid).

     

    Add eggs to mixing bowl and mix for 10 seconds, speed 4.

     

    Add drained zucchini, 45g self raising flour and 30g grated parmesan to egg mixture. Mix for 10 seconds, speed 4.

     

    Heat a fry pan on the cooktop over a medium heat, add 1 tablespoon of oil and heat. Add 2 tablespoons of the zucchini mixture to the pan to create the fritters. Gently fry for 2 minutes, then flip over and fry for an additional minute.

     

    Keep fritters warm in a Thermoserver and repeat frying for remaining fritters.

     

    Serve fritters warm or cold with chutney and natural yogurt.

Tip

No need to wash the bowl between the steps as all the ingredients will end up together anyway.
