Ingredients

Base

  • 100 g Butter
  • 50 g sugar
  • 3 egg yolks
  • 1 level teaspoons vanilla
  • 250 g plain flour
  • 1 level teaspoons baking powder
  • 1/4 level teaspoons salt

Topping

  • 150 g raspberry jam
  • 2 level tbsp lemon juice
  • 3 egg whites
  • 1 level teaspoons cornflour
  • 150 g sugar, White
  • 100 g Shredded coconut

Recipe's preparation

    Base
  1. Heat oven to 180 degrees & grease & line slice tin with baking paper
  2. Weigh in softened butter and sugar, 15 seconds speed 5. Scrape down sides & repeat.
  3. Add vanilla then set Thermomix to run on speed 5 & add egg yolks one at a time at 5 second intervals through the hole in the lid.
  4. Press base into prepared slice tin
  5. Weigh jam into a small bowl, add lemon juice & stir to combine. Spread evenly over base.
  6. Meringue topping
  7. Clean & dry mixing bowl thoroughly. Weigh sugar into separate bowl.
  8. Insert whisk attachment, add egg whites & measure in cornflour. Process on speed 3, increasing to speed 4 until whites form stiff peaks
  9. Add sugar 1 Tablespoon at a time through the hole in the lid with Thermomix running at speed 3, process until well combined & glossy
  10. Remove whisk, weigh in coconut & fold in 10 seconds speed soft Gentle stir setting"Gentle stir setting" repeat if required
  11. Spread meringue topping over jam
  12. Bake 30 minutes on low oven shelf.
    Cool & slice.
    Store in an airtight container at the back of the pantry where your husband can't find it 😉

Tip

Best with a good quality raspberry jam or homemade if you have it.
Dessicated coconut works just as well as shredded.
