Mini curry quiches

Ingredients

Mini curry quiches

  • 1 Large carrot
  • 1 zucchini
  • 1 small potato
  • 1 egg
  • 100 grams Cheddar cheese, grated
  • 125 grams Self Raising Flour
  • 3 teaspoons curry powder
  • Salt & pepper to taste
  • 3 Puff pastry sheets, thawed (approx three)

Recipe's preparation

    Method
  1. Pre-heat your oven to 170 degrees (fan forced).


    Chop your diced vegetables for 5 secs, speed 7 and then mix the remaining ingredients for 5 secs, speed 4.


    Lightly grease your mini quiche/ cupcake pans with cooking oil spray. Cut circles out of your puff pastry and flatten them into the tray.


    Fill each pastry case to approx 2/3 full with your curry mixture.


    Cook for 15 – 20 mins or until pastry is golden brown.


    Makes approximately 24 mini quiches.

    Really really nice! I added a teaspoon less of curry powder due to a fussy toddler and an extra egg for a bit more mixing power. Turned out a treat and enjoyed by whole family. Had some left over batter and no pastry so just cooked it as muffins - just as nice!

    I have baked these in 12 regular muffin tins. I was intrigued by having curry in a quiche. I baked them for about 25 minutes on 180 degrees (not a fan forced oven). Yum! I will take leftovers to work.

    Sorry to the creator of this reciepe, but they are nothing like a quiche, 1 egg doesn't cut it. There's not texture due to the lack of eggs & more curry is needed.

    Just about to make these but they are for a function tomorrow morning. Would the pastry go soggy by morning - would it be ok to make the mixture and bake in the morning?
