Breakfast muesli muffins

Ingredients

  • 180 gram dried fruit of choice
  • 170 gram dried muesli
  • 125 gram orange juice
  • 125 gram Apple Juice concentrate
  • 40 gram vegetable oil
  • 100 gram honey
  • 1 egg
  • 250 gram whole meal flour
  • 3 teaspoon baking powder

Recipe's preparation

  1. 1. Preheat the oven for 170 degrees, grease 12 muffin pan or line tray

    2. Chop dried fruit on speed 5 for 10 seconds or until desired pieces. Set aside

    3. Mix juices, oil, honey, and egg speed 4, 10 seconds

    4. Add chopped dried fruit, muesli, flour and baking powder, Closed lid turbo 3 times

    5. mix Counter-clockwise operation 5 seonds, speed 4

    6. Spoon mixture into prepared muffin tin, bake for 20 minutes

    7. Allow to cool for 5 minutes before removing muffins to cool on rack.

  • I did not have any juice in

    I did not have any juice in the house so used vanilla unsweetened coconut milk with almond milk unsweetened in equal proportions instead.  Also no honey so used agave nectar in its place.  They turned out great, very adaptable and very delicious, will certainly be making them again!
