Recipe's preparation
Roast pepitas in oven. These can be done well in advance and stored in a container in the pantry. Great for snacks.
Add oats, flaxseed and chia to bowl and mix on speed 4 for 5-10 seconds. Set aside. Do not clean bowl.
Add pepitas and sunflower seeds and mix to form a butter consistency.
Return oats to mixture and add all remaining ingredients. Mix on speed 4 until all ingredients are combined.
Roll into balls or logs and serve.
Store in fridge for weeks. Or freeze and defrost in fridge as needed.

Tip
How to roast pepitas:
Set oven to 160 degrees C
Spread layer on a cookie tray
Cook until they start to turn brown. Approx 10-15 mins. All ovens are different so keep watching.
Allow to cool before storing.
