Nanna Lowes Christmas Pudding

  • 1 packages Suet, dry suet from the grocery isle
  • 60 gram plain flour
  • 1 pinches salt
  • 800 gram mixed dried fruit
  • 60 grams almonds, Slivered of chopped
  • 220 gram brown sugar
  • 200 gram bread, fresh
  • 4 --- eggs
  • 120 grams Boiling water
  • 1/2 teaspoons bicarbonate of soda
  • 2 heaped tablespoons mixed spices
  • 1 heaped tablespoons ground ginger
  • 1 heaped tablespoons ground cardamom
  • 1 heaped tablespoons ground cinnamon
  • 1/2 bottles bourbon, Brandy, scotch, port ,any liquor you like

Recipe's preparation

    Method
  1. Mix the spices and the alcohol with the dry fruit and almonds at least 24 hours in advance - I like to have mine marinating from October. Give it a stir when you walk past it every so often. Keep in a covered container. I like to use up near empty bottles of booze- I have been known to use port, red wine, muscat, sherry bourbon . I like to mix it up each year
  2. Blend speed 6 for 10 seconds broken up bread leave in bowl
  3. Mix all dry ingredients (sugar, suet,flour, salt ,breadcrumbs) together speed 4 for 4 seconds
  4. Mix bi carb and boiling water together in a cup before adding into bowl then add marinated fruit ,eggs,Counter-clockwise operation speed 3 for 5 sec or until combined
  5. Put the mix into greased pudding dish- cover with baking paper and tie with string.Put 2 litre of water in bowl and steam in varoma for 3 1/2 hours on varoma temperature . Alternatively in a glass ,enamel dish in a pot with simmering water with baking paper and brown paper covering the top tied with string . (The two layers of paper help keep moisture off the top of the pudding) do not let the bowl run dry - i normally top up after the first 99 mins
