Vanilla Cupcakes
  • 100 g butter, at room temp
  • 100 g full cream milk, at room temp
  • 150 g caster sugar
  • 150 g plain four
  • 1 level tsp baking powder
  • 2 eggs, at room temp
  • 1 level tsp vanilla extract

Recipe's preparation

  1. Place the flour and baking powder into the bowl. Turbo for a few times and then set aside to use later.

  2. Pulverise the sugar for 20 seconds at speed 10.

  3. Add butter and mix for 15 seconds at speed 10. Now insert the butterfly and continue to cream for 1 minute at speed 4. The sugar should be dissoved. Push creamed mixture down with the spatula.

  4. Add eggs, on at a time, and then the vanilla extract over 30 seconds on speed 4 through the opening of the lid. Push down mixture again with the spatula before proceeding to the next step.

  5. Alternatively add all of the flour and milk, starting with one third of the flour, then half half milk, one third flour, remaining milk and finish with the remaining flour over 40 seconds on speed 2.

  6. Pour cake mixture into cup cake cases, not filling more that two thirds of the way.

  7. Place into a preheated oven at 180 C. Bake for about 14 minutes or if skewer comes out clean. Avoid overbaking as cupcakes will dry out too much and be very hard. Allow to cool on a wire rack before decorating with buttercream frosting.

    I think you should change the name on these cupcakes to vanishing vanilla cupcakes!  Every time I make them they disappear so quickly!  I made a batch tonight and added a bit of cocoa to the mixture and iced them with Wilton's buttercream icing (also with a bit of cocoa) - they got a huge tick of yum and apart from 2 which my partner stashed for his lunch tomorrow they are all gone, there are 3 of us in this household, myself, my partner and my 20 yr old son -  I only got one!    Cooking 7

    I've just made these for my son's birthday and they were lovely - the mixture was like fluffy clouds!

    I love that these had a nice flat top and they are still nice and fresh the next day....

    (I did try to get clever and make some chocolate ones by adding cocoa with the flour but they didn't work.... I think I overbeat the mix and they turned out dry and hard  tmrc_emoticons.((. So now my quest for the perfect chocolate cupcake continues... sigh.

    This is a wonderful recipe. I doubled the batch without any problems. I softened the bitter a little in the microwave and used eggs straight out of the oven.

    Cake is delicate, soft, light and fluffy. One of the best cupcakes I have made - and I have tried lots (thermie and conventional). I will definitely be making these again.

    This recipe was wonderful!  We doubled the recipe to make enough for my daughters preschool and it worked perfectly.  We just had to mix a little longer when creaming the butter and sugar, and again when incorporating the milk and flour.  I did forget to double the eggs though, but it didnt seem to matter.  After reading other comments, I watched the cupcakes like a hawke when they were baking, and was sure to take them out before they started to colour much.  The result was 56 perfect mini cupcakes... well now 54 because we couldnt wait for them to be iced before we tried them.  Yummm!  Will never make cupcakes in the mixer again!  Thanks so much!

    I tried these twice and they just don't work for me. I'm disappointed as I had high hopes after all the great ratings and comments. First off, I found the recipe quite fiddly. For example, you are trying to push flour from a bowl through the TM lid, so it goes everywhere. After the final mix there will be dry flour all over the butterfly, so you'll have to try and scrape it off and re-mix. I think it is harder too because the ingredients are written in random order rather than the order you use them. I would be okay this all that if the result was good, but these and bland and a little dry. The first time, I thought maybe I had over cooked them, so the second time I was really careful to pull them out as soon as they stopped bubbling. I thought if anything they might be under cooked because they weren't yet brown at all, but they ended up still being dry.

    Unfortunately, I will be trying a different recipe next time.

    You can't overfill the bowl. I would double recipe and make 2 double batches. I double the mixture for the too easy chocolate cake in the every day cook book and it works out great.

    tmrc_emoticons.) Delish cupcakes! Loved licking the cake batter from bowl and did managed to bake some! The cupcakes turned out lovely tasting, light and also came away well from the cupcake casings, which is a pet hate of mine, when you eat a cake and half of it is stuck on the cup cake wrapper! But not these ones, these peeled away nicely. Have frozen for bday party (so only got to sample 1 tmrc_emoticons.(  tmrc_emoticons.;)Will be making again. Thanks for a great recipe. Has anyone making own icing sugar from blitzing the raw sugar for this recipe? Or do you need to use caster sugar for these cakes?
