Big D's Meatloaf

Meatloaf

  • 500 g beef or lamb mince
  • 1 clove garlic
  • 4 sprigs Fresh Flat Leaf Parsley
  • 1 sprig rosemary
  • 2 eggs
  • 90 g mozarella
  • 60 g Parmesan cheese
  • 50 g breadcrumbs
  • 2 slices double smoked ham
  • 10 slices bacon
  • 600 g Mixed vegetables, chopped
  • salt and pepper to taste

Red Sauce

  • 4 sprigs fresh parsley
  • 1 brown onion
  • 1 clove garlic
  • 1 stalk Celery
  • 1 sweet potato
  • 1 carrot
  • 1 potato
  • 40 g olive oil
  • 150 g white wine
  • 800 g tinned peeled tomatoes
  • salt and pepper to taste

Recipe's preparation

    Meatloaf
  1. If making bread crumbs, do this first and set aside.


    Place paremesan cheese and parsley into mioxing bowl and grate 10 sec/speed 9. Set aside.


    Place garlic and rosemary into mixing bowl and chop 3 sec/speed 7.


    Add beef or lamb and press briefly 8-10 times/1 sec/TURBO to mince.


    Add eggs, breadcrumbs, salt, pepper and reserves parmesan and parsley and press 4-5 times/1 sec//TURBO, then mix 20 sec/speed 5.


    Lay out ThermoMat or long piece of aluminium foil. Lay proscuitto or bacon rashers into a neat rectangle on your ThermoMix mat or foil. This will form the oputside of your meatloaf after rolling. Remove mix from the bowl and place on top of the bacon. Shape into a large recatngle about 3cm thick. Place the ham and cheese slices along the longest edge and roll the mince into a log to enclose. Gently remove the ThermoMat or foil from underneath the roll.


    Lightly oil the Varoma tray and place the meatloaf into the centre. Pack vegetables of choice loosely around the meatloaf and in the Varoma dish as required ensuring steam is still able to circulate.


    Set Varoma aside until ready to cook with the Red Sauce. 

  2. Red Sauce
  3. Place garlic, onion, parsley and celery into the mixing bowl and chop 3 sec/speed7. Scrape down sides of bowl.


    Add oil and saute 3 min/Varoma/speed 1.


    Add remaining red sauce ingredients and cook 5 min/Varoma/speed 1.


    Place Varoma with meatloaf into position and cook 45 min/Varoma/speed 2. Test to ensure meat is cooked through or to your preference by slicing open and ensuring the colour is uniform.


    Place meatloaf onto a large serving platter with steamed vegtables and pour sauce over the top or serve on the side.
