Recipe's preparation
- Place garlic into TM bowl and chop 3 sec/ Speed 7
- Insert Butterfly, than add oil and saute 100 deg/ 2 mins/ Speed 2
- Add chicken and cook Varoma/ "Counter-clockwise operation" / 2 min/ "Gentle stir setting"
- Add chilli paste and cook Varoma/ "Counter-clockwise operation" / 2 min/ "Gentle stir setting"
- Add oyster sauce, light soy sauce, raw sugar and onion cook Varoma/ "Counter-clockwise operation" / 5 min/ "Gentle stir setting"
- Add roasted cashews and cook Varoma/ "Counter-clockwise operation" / 1 min/ "Gentle stir setting"
- Serve with rice and garnish with chopped shallots

Tip
The chilli paste I use is available from Asian Shops - Chilli Paste with Soya Bean Oil - Pantai Brand (see 2nd photo)
We like a lot of sauce to go with rice however if you like less then reduce the oyster sauce and light soy sauce accordingly
You can use sweet chill sauce for this recipe however it does change the flavour and will make it spicy compared to the chilli paste with soya bean oil
Also feel free to add vegetables to this dish.

ANy leftovers always go into single serves with rice into the freezer for our weekday lunches at work. Freezes well!

A lovely recipe, however I don’t eat chili, so i left it out. I didn’t put as much as the recommended amount of sugar, only 35g, so the sauce was quite overpowering. Not sure if it was the Oyster Sauce, or light Soy Sauce, or both. Can somebody suggest what I can do so the sauce is not so overpowering, as I think this is such a wonderful easy recipe.

MissTang: soy bean oil is not a separate ingredient - it’s in the chilli paste brand recommended for recipe. The brand used is sometimes difficult to find so you can try any chilli paste/jam you can get hold off. Flavour might be altered but it’s still good.

I did tweak it. 70gms of oyster sauce, 40gms of soy sauce, 20gms of coconut sugar and I couldnt get the chilli paste in the pictures above so I used Ayams Thai Chilli jam - a teaspoon. I cooked for 7 minutes at step 5 and 4 minutes at step 6. Just sensational the house smells amazing!! Miss 9 demolished it and she's a fusspot - she left the cashews.
If you were so inclined you could add some thinly sliced zucchini and capsicum, which I may do next time or steam some asian greens while its cooking.

- reduced Oyster to 80g
- soy sauce to 45
- a dollop of ginger paste
- XO sauce instead of chilli paste
- no sugar
- Added capsicum and blanched broccoli.
- Cooked 7 mins longer

One of my favourite dishes to order out and this lived up to expectations. I did use coconut sugar and reduced it to 20g. I made sauce in the thermomix and then cooked chicken and veggies in wok. Next time I would reduce the soy and oyster sauces and increase chicken. Would be a great recipe for feeding a crowd. Thanks.
