Tomato Powder

Ingredients

  • 7kg tomatoes
  • 4 Green peppers
  • 3 onions, large
  • 3 carrots, large
  • 2-4 cloves garlic
  • 1 jar Pimento, or 2 chillies Optional

Recipe's preparation

  1. Chop all ingredients in batches Speed 4, 30 seconds and place into 12 litre saucepan or 2 smaller pans.

    Bring to the boil and over medium heat.

    Boil gently, uncovered for about 5 hours.

    Mixture will be thick enough to mound on a spoon.

    Stir often to prevent scorching.

  2. Pruee mixture in batches Speed 9, 1minute

  3. Dehydrate
  4. Spoon mixture onto solid sheets and dry until crisp.

    If you don't have a dyhdrator you can do this step in a very low oven it takes 24 - 36 hours.

    Once crisp break up and place in Thermomix on high speed until it becomes powder.

Tip

This is great to have as a standby

I have add different herbs to give it more flavour at times

Tomato Paste 1Tbsp powder and 1Tbsp Water

Tomato Sauce 1Tbsp powder to 3Tbsp Water

Tomato Soup 1 Part powder to 1part Water and 2 part Cream

Tomato Juice 1tsp powder and 1/3 cup water or more

The quantity of water for soup and juice will have to be adjusted to you taste.  Add to meat dishes, scrambled eggs, soups, stews.

    we got 150kg the other day !!!  not all can be used, part goes to the animals as feed....tmrc_emoticons.)    the tomatomix is in the

    oven now...its says on very low heat.... i checked on my chart...120 degrees is very low...i put it on 100 degrees..

    is that about ok ????

     

    yes we are very lucky...we get tomatoes every week..normally about 10 kg a week..most gets eaten as salad or in

    pasta sauce.... rest i try to make chutney or tomatosauce...but this recipe is really special and would go a long way..

    fingers crossed i did everything right...tmrc_emoticons.)

    Your lucky to have lots of tomatoes. We are only getting enough to eat fresh this year. Last year I made 2 lots of powder, dehydrated lots and put heaps in the freezer.

    hi, i am cooking this recipe at the moment, as we have sooooo many tomatoes..given by our neighbour a market gardener...very lucky......question :  is there no salt in this recipe whatsoever or does that get added later ???

     

    thanks for a reply..... i don't have a dehydrator, so the oven will have to do....see how i go..only did half a batch
