Yellow curry chicken - complete meal in 2 stages

Ingredients

Rice

  • 400 grams Jasmine rice (rinsed well)
  • 900 grams water

Rice

Chicken

  • 800 grams Chicken Thigh Fillets, cut in half
  • pepper and salt to season
  • paprika

Sauce

  • 2 brown onions halved
  • 4 cloves garlic peeled
  • 2 cm piece ginger peeled
  • 2 yellow capsicums roughly chopped
  • 1 fresh chilli halved (or tsp chilli flakes)
  • 1/2 bunch coriander
  • 1 heaped tablespoon Vegetable stock paste
  • 1 tsp honey
  • 1 tsp turmeric ground
  • 2 tsp curry powder
  • 400 gram tin chickpeas drained
  • 1 tsp tomato paste
  • 250 grams water

to serve

  • Lemon wedges
  • natural yoghurt
  • coriander leaves

Recipe's preparation

    Rice
  1. Pour water into bowl.  Rinse rice in steaming basket then place into bowl.  Put lid on (without MC)

  2. Chicken
  3. Place chicken fillets in both layers of Varoma (making sure to leave room in between for steam to get through).  Put Varoma in place.

     

    Cook 20min/100deg/sp4

     

    When cooked, remove basket using spatula and tip rice into Thermoserver, top with chicken and put lid on to keep hot.

  4. Sauce
  5. Place Onion, garlic, ginger into bowl and chop 3sec/sp7.  Use spatula to scrape sides of bowl.

    Add half the capsicum pieces, stock, chilli, the stalks of the coriander, honey and spices.  Chop 10 sec/sp 7.

    Add remaining capsicum, tomato paste, and 1 cup water.  Cook 10min/100deg/reverse/sp 1

    Add chickpeas and cook further 3min/100deg/reverse/sp1

  6. To serve
  7. Spoon rice onto each plate and place chicken slices on top.  Spoon sauce onto chicken and serve with lemon wedges, coriander leaves and a dollop of yoghurt.

    I needed to cook the chicken on its own for 8 more minutes on Varoma after removing the rice. I reserved the liquid from cooking the rice and chicken and used it for the cup of water. We (family of five) found the curry turned out ok but would have liked more flavour. Maybe some coconut cream? Or something else? Thanks for the recipe, though!
