Ragu of Tiny Meatballs

Ingredients

Meatballs

  • 750 grams Minced beef
  • 50 grams Parmesan cheese
  • 3 cloves garlic
  • 1 lemon zest
  • 1 bunch parsley, small
  • 2 tablespoons Sweet chilli sauce
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • salt and pepper to taste
  • 1 large egg

Vegetables to add to sauce

  • 2 carrots, cut into chunks
  • 1 zucchini, cut into chunks
  • 100 grams mushrooms, sliced
  • 1 red capsicum, quartered and seeded

Tomato sauce (ragu)

  • 3 cloves garlic
  • basil, small bunch (stalks removed and saved)
  • 1 red chilli
  • 1 steamed capsicum
  • 20 grams olive oil
  • 700 gram bottle passatta
  • 1 teaspoon red wine vinegar
  • salt and pepper to taste

Recipe's preparation

    Meatballs
  1. Method

    Grate parmesan cheese in TM bowl for 10sec/speed 9, set aside.

    Place parsley, garlic, and lemon zest into the TM bowl and chop 5sec/speed 7.

    Add remaining ingredients and mix Counter-clockwise operation/10sec/speed 3 to combine.

    Form into small balls and place loosely into varoma dish.

  3. Method

    Chop carrots and zucchini in the TM bowl 3sec/speed 5.

    Place on varoma tray along with sliced mushrooms and the capsicum.

    Fill TM bowl with 700ml water, lock on lid and place varoma into position.

    Cook 20min/varoma/speed 2.

    Turn meatballs and cook for a further 5min/varoma/speed 2.

    Place cooked meatballs and top with cooked vegetables (retaining the capsicum) into a Thermoserver to keep hot while making the sauce.

  5. Method

    Place garlic, basil stalks and capsicum into TM bowl. Chop 2-3sec/speed 6.

    Add 20g oil and the chilli and saute Counter-clockwise operation/3min/100C/speed 1, MC off.

    Add passatta, vinegar, and seasoning and cook Counter-clockwise operation/8min/100C/speed 1.

    Remove chilli and pour sauce over meatballs and vegetables.

    top with fresh torn basil leaves and the parmesan cheese.

    Serve with pasta of choice, mashed potato or mashed sweet potato.

    Yummy! Lover this dish. Was able to get everything ready put in the Thermoserver than do the afternoon sports run. Got home, finished off the sauce and cooked the pasta. Love
