Coconut and Lemon Grass Curry Bowl

  • 1 garlic clove, peeled
  • 2 cm fresh ginger, peeled
  • 1 tbsp olive oil
  • 2 shallots, finely sliced
  • 1 red capsicum, thinly sliced
  • 1 tbsp cumin seeds
  • 2 tbsp coriander seeds
  • 2 tbsp ground turmeric
  • 1 sticks lemongrass, Crushed and Finely chopped
  • 1 --- dried lentils, one cup, rinsed & drained
  • 250 grams cherry tomatoes, one punnet or 1 can drained tomatoes
  • 400 gram coconut milk, 1 can
  • 1 tbsp Vegetable stock paste
  • 300 grams water
  • 2 --- Fresh Baby Spinach, 2 cups

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Place garlic & ginger in Tmx bowl. Chop 3 secs/speed 7.
  2. Add olive oil, shallots & capsicum. Saute 3 min/100°C/speed 1. Use simmering basket on lid instead of MC.
  3. Add spices & saute 2 min/100°C/speed 1. Use simmering basket on lid instead of MC.
  4. Add lemongrass, dried lentils, cherry tomatoes, coconut milk, vegetable stock paste & water. Cook 15 min/100°C/reverse/speed 1. Use simmering basket on lid instead of MC.
  5. Add spinach leaves & lime juice & stir with spatula. Allow spinach leaves to wilt for 2 mins then serve.
