Easy-Peasy No-Bake Lemon Cheesecake

Ingredients

Base

  • 125 g Butter
  • 1 package Butternut Snaps

Filling

  • 250 g cream cheese, roughly chopped
  • 400 g condensed milk
  • 185 g lemon juice, freshly squeezed

Recipe's preparation

    Base
  1. Line base and sides of a springform pan.

  2. Melt butter in TM bowl 3 min / 50*C / Gentle stir setting.

  3. Add biscuits to bowl and blend 10 sec / speed 9.  Scrape down sides of bowl and blend again 2-3 sec / speed 5.

  4. Press into base and up sides of pan, making sure the sides are at least 5cm high.

  5. Refrigerate 15 mins.

  6. Filling
  7. Make sure the condensed milk and lemon juice are ready to pour.  Place cream cheese into TM bowl and start blending at speed 5.  After 5 seconds start pouring the condensed milk carefully into the bowl through the lid opening.  Follow immediately with the lemon juice.  The whole process should take no longer than 60 seconds.

  8. Pour filling into base.

  9. Cover with cling film and refrigerate for at least an hour before serving.

Tip

You can reserve some of the biscuit base to sprinkle on top for an easy decorative finish.

For Christmas, I make a red jelly to pour over the top to about 0.5cm deep, and place seasonal berries on top.  The kids love it!

Since I posted this recipe, some people have commented that their filling didn't set, although many others have said it worked fine.  I have no answers as to why this might have happened.  Perhaps the correct ingredients or quantities were not used?  Sometimes people substitute 'light' ingredients and expect the same result.  All I can say is I have been making this recipe of my Grandmother's since I was a teenager (over 30 years) and I have never had a problem with it.  I hope it works for you.

    Scleeve: You have to make sure you use full fat cream cheese. And definitely don't use spreadable cream cheese, they will not set. But if you did do that. I am out of ideas haha.

    After 24 hours in the fridge, still not set. My usual no bake cheese cake takes 750grms of cream cheese and the same for your other ingredients. I've scooped out the filling and am going to add more cheese and see if i can rescue it in time for my afternoon tea tomorrow

    Your recipe looks great. My mum maks a similar one also using crushed pineapple. In regards to the cheesecakes not setting it may actually be to do with the type of lemons people are using not your recipe. Myer lemons do not set cheesecakes. Anyone who makes cheesecakes regularly know to avoid these lemons so you don't come across that issue.

    Awesome recipe. I doubled quantities of all except for lemon. Just a heads up, if you use real lemons and or limes, you do not need to we the same amount listed. I used 240gms combo of lime and lemon - remember, I double th quantity - so that'd be 120gsm normally. It might be why some people are finding their filling isn't setting.

    Great recipe.... I have made it on 4 different occasions using lemon juice that had been frozen as well as freshly squeezed, and it has worked perfectly for me each time. So easy and so yummy!!!

    Made this last night, took about 25mins incl pressing base into tin and cleaning bowl between steps. Tasted delicious! everyone commented that its my best cheesecake yet.I can't comment much on the setting abilities of the recipe because I added 1tsp gelatin to ensure it set as it was for a get-together today I couldnt risk it not setting, but I think it would be fine as with the gelatin it was a little over-set if that makes sense.

    i have used this recipe for years also.. usually perfect, but i did discover that when it didnt set, the weather ws warm, or at least the kitchen was! also, i now know it is the pectin in the lemons that sets it, so yo need to use green or slightly under ripe lemons... as an extra guarantee, i have taken to using one cup of whipping crea,. added after the philly cheese and lemon whipped... so, just make on cool days, or put the airconditioner on!!! ps, the commercial lemon juice most definitely will not set the mix!needs to be fresh lemons..hope this helps and happy baking!

    Thank you for the recipe! Very helpful and very easy! I used 3 individual containers to make individual mini cheesecakes, as it meant that if the mixture didn't set well it wouldn't matter. Tasted delicious!

    I've not varied this recipe at all so I'm not sure. Is it a lemon-flavoured cream cheese? If so, and it has the same consistency of 'normal' cream cheese, then it may work.

    Thanks for the recipe. The base was great and very easy to make but the filling didn't set. I think it might need gelatine. Maybe if the lemon juice was heated with gelatine? And then the  milk ingredients added after? It was easy though and did have a nice flavour. It just needs to set.

    I just made this recipe yesterday and unfortunately mine didn't set either. My thermomix was cool at the time, I wonder if the Philly straight from the fridge has an affect? Maybe it needs to be kept out of the fridge before using?  I've tried putting it in the freezer but that hasn't really helped it set.

    Hi everyone,

    I'm so sorry - I've only just realised these comments and questions were here. I'm a TM newbie and I assumed that I would get a notification if someone posted on my recipes (and I've been away over the summer)! Now I see that I have to tick a box for the notifications...

    I'm really not sure why some of your fillings wouldn't have set. Was the TM bowl still warm when you blended the ingredients? It is quite a thick mixture. Where the ingredient quantities correct? I have used this recipe for over 20 years and never had trouble, and it converted to the TM beautifully for me. I used a condensed milk recipe from this site, but that seemed to come out exactly the same as the tinned condensed milk.

    It's such a delicious and easy recipe I hope you'll be keen to have another go.
