Recipe's preparation
Place sugar into mixing bowl and mill 2 sec/speed 9. Scrape down sides.
Halve vanilla pod lengthways, and scrape out seeds into mixing bowl. Place all remaining ingredients into the mixing bowl and cook 6 min/80oC/speed 4.
Pour mixture into a container and cover. Place into the freezer for 5-6 hours or until firm but not completely frozen.
Remove from freezer and use ice cream scoop to break up into small scoops in the mixing bowl. Blend 20 sec/speed 9, then 10 sec/speed 4. Return to freezer for at least 5-6 hours before serving.

Delicious ice-cream!
I made a few alterations - I halved the recipe and used 90g rapadura sugar (same cooking time). I would use less sugar next time as it was still quite sweet for me. The rapadura sugar made it more like a caramel ice-cream - beautiful!

I made a variation of this, using stevia instead of sugar. Tastes amazing, but it freezes so solid that I have to microwave for over a minute to just get some out of the container!
Wondering if anyone can give any tips on what may have caused this??

Delicious! I did make a few alterations to the recipe; I used 150g dextrose instead of sugar, used whole eggs, whipped all the ingredients for 30 sec or so before adding heat, and then cooled the mixture down enough to put into the ice-cream churner. I'm keen to try a chocolate version!

Best vanilla ice cream I've ever had! It definitely took a lot longer to set as others have mentioned but that wasn't an issue for me. Will continue to make this and have as a constant in our freezer. I've also shared it on my Facebook Thermie page, here's the link:
