Ingredients

  • 1 tablespoon shredded or dessicated coconut
  • 1 apple, quartered and core removed
  • 3 fresh dates (or dried)

Recipe's Preparation

Place all ingredients in Thermomix.  Close lid and press TURBO button a few times until mixture is to desired texture.
Serve over natural yoghurt and top with berries or other fruit if desired.

Recently Cyndi O'Meara (nutritionist and author of Changing Habits, Changing Lives) visited our state holding workshops and information evenings.  Unfortunately I wasn't able to attend any of them, but a friend shared with me this delicious breakfast recipe.  I've been eating it each morning for about a week and absolutely love it - fresh and easy to eat.  It doesn't leave me feeling bloated or flat and the best part is that I feel full until well after lunch time!  Each letter of the name, CADA, corresponds with an ingredient so you won't even need to pull out your cookbook for this one!

I'm  having this for lunch right now! I added lots of cinnamon on mine and love it. Next time I'll use only two medjool dates as it's too sweet to my taste. It works well with coconut milk too (making it dairy free this way). YUM! Thanks for the recipe!

How long will this last in the fridge?

So simple and so delicious! Quite sweet for me though but I just put in 1-2 dates less. 

Have been having this every single day since I discovered it and I have it ontop of my homemade yoghurt. love love love it!!

I am just wondering what sort of almonds did you guys use in this?  We have raw and roasted on hand here at my house.  Thanks!  Smile

Sure is yummy! I saw it made at TM cooking class - improvised as they had no apple with watermelon very nice!
