Grandma's Chocolate Ganache

Ingredients

Grandma's Ganache

  • 480 grams fresh cream, or UHT cream for greater shelf life
  • 900 grams 70 per cent cocoa dark chocolate, chopped
  • 60 grams Butter

Optional Flavourings per 200 grams ganache

  • 8 drops rosewater essence
  • 8 drops pepperrmint essence
  • 1/2 level tsp Coffee Essence
  • 1/2 Whole Orange peel, Grated
  • 1-2 pod Vanilla bean seeds, to taste
  • 10 grams instant coffee
  • 10 grams 40% Alcohol, rum, kirsch, etc
  • 10 grams wattleseed, ground
  • 100 grams dried fruit, chopped
  • 100 grams walnuts, chopped, e.g. almonds, peanuts, walnuts, pistachios

Recipe's preparation

    Grandma's Ganache
  1. Put cream into the bowl. If only making one flavouring per batch, and using infusion ingredients such as wattleseed, tea, coffee, vanilla bean seeds, or orange peel, add the infusion flavourings with the cream. Bring it slowly to the boil by heating it 5 minutes/100/speed 1.

  2. Add the chocolate and any alcohol or any other flavourings used. Mix on speed 2/with MC off until the chocolate has melted and blended.

  3. Add the butter and stir 1 minute/speed 3/50 degrees, or until well blended.  Allow it to cool to 37 degrees.

  4. If making more than one flavour of ganache chocolates from the batch, separate the ganache evenly into amounts equalling the number of flavours you wish to use, and the add the desired flavourings in the correct proportions. Mix for 1 minute/no heat/speed 2.

Tip

Chocolate ganache with fresh ingredients will last at least one week.

Ganache can be poured while warm to fill tarts, or pinto a slab tray and cut into shapes when cooled. It can also be used as a filling for moulded chocolates when room temperature, or when cooled, it can be rolled to make truffles.

Optional alterations.

Use white, milk or dark chocolate to vary flavours.
