Shredded Beef

  • 1 tablespoon cumin seeds or ground
  • 1 tablespoon coriander seeds or ground
  • 1 tablespoon paprika
  • 1 tablespoon tomato paste
  • 3 cloves garlic
  • 2 small Red Onions
  • 1 large green chilli, unseeded
  • 0.5 litre beef stock
  • 600 gram Beef Steak, cubed
  • 1 handful fresh coriander leaves
  • salt to taste

Recipe's Preparation

Shredded Beef

1.

 Place cumin and coriander seeds into TM bowl and dry roast until fragment

(Temperature: Varoma – Speed: 1)

 If using ground spices, skip this step and proceed to step 3

 


2.

  1. Once fragment, mill spices together 
  2. (10-20 seconds on speed 9)

3.

  1. Empty ground spices from the TMB into a separate bowl, Add paprika, and coat beef steak
  2. Note: Do not rinse the TMB, leave residual spices in the bowl for the next step.

4.

  1. Place garliconions and chilies into TM bowl and chop for 3 seconds on speed 7. Scrape down and sauté for 3 minutes at Varoma Temperature on speed 2.

5.

  1. Add beef stock to TMB. Place coated beef into basket and insert into TM bowl.

6.

  1. Cook for 20-25 minutes at 100ºC on speed 2.

7.

  1. Remove basket and set aside. Drain stock through strainer and return solids to TM bowl.

8.

  1. Place cooked beef into bowl and add fresh coriander and salt.

9.

  1. Add 80-100g of the reserved stock and tomato paste

10.

  1. Shred beef for 8 seconds on counter-clockwise operation + speed 6.

11.

Serve in jumbo tortillas with Salad of choice including, mixed greens, chopped avocado, slice spring onions /shallots, tomatoes, cucumber etc.

How long approximately would you need to dry roast?

Im not a fan or coriander, I will leave out the fresh coriander but do you think you'll be able to taste the ground coriander in it? It sounds divine and im wanting to cook it tonight, im just really not a fan of that herb!

Delicious, we just had it as a wrap and my 2 y.o who won't eat steak scoffed it up too!

OH EM GEE!!!I was a bit wary, never having cooked anything like this before. The flavours, amazing!!!!We had it on nachos with avocado and sour cream! So so so so so GOOD!!!!

Yum! Will try rump as others have indicated, and boost up the spices and tomato paste. Lovely recipe, I also stirred through kidney beans at the end and used on top of a baked potato with thermo made guacamole, salsa,  sour cream and chopped capsicum and spring onion. Went down a treat, thank you for sharing  Smile

A regular favourite in our house now. As per previous comments, definitely double the spices and tomato paste. I have mine wrapped in lettuce rather than burrito for a low carb option. YUM!

Yum! this will be a regular in our house. next timeI'll be extra careful to only put it on speed 6 for 8 seconds not speed 8 for 8 seconds! whoops!

Thank you for recipe, but, special thank you for other comments.  Thank you for your advice, as I upped the quantity of spices and chilies as a result, and, as a result, the results were astounding.  My 'foodie family' were impressed, even those Mexican food safari travellers.  I doubled the meat, trebled and a bit the spices and steamed the meat in the Varoma, and, as recommended, and was careful with the speed and time for 'shredding'.  I cannot believe that I could and have prepared such a tasty dish.  Complimented with Thermo frijoles, salsa and guacamole and tortillas, salad, sour cream and of course sangria, fantastic Mexican feast in suburban Melbourne.

Great recipe, nice and quick. I squeezed fresh lime over the top of the layers before eating. Very moreish. I think I will add extra chilly next time and as others said blitz for less time, but this dish will replace mince for sure.

Lovely alternative to taco mince!

I made it without chilli as we gave some to our baby son, but next time I make it, I'll make a batch with chilli for us!

I added a carrot and capsicum at the onion and garlic stage and only 80g water. Was absolutely delicious thankyou!

I didn't add the chilli as I was cooking for kids, so it could have done with a little extra spice. I'll add more tomato paste next time for flavour, and also I'll only shred for 4 sec as it was a bit too fine. Other than that, the kids loved it.

Made this for the second time tonight and it was amazing. I used smokey paprika which gave it an amazing smell whilst cooking. The first time I made it I used prob about 1kg of steak and it worked fine. I used gravy beef this time which didn't shred as well as rump did but still amazingly good. Great to pull out of the freezer for a quick and easy preprepared dinner too.

Yummmmmm. Great on wraps - but I like the idea of using it on a Mexican Pizza!!

Omitted Chilli because I was feeding kids, but that would have been amazing! Next time I am getting Jalapenos for my wrap!!

I think I will add more spices next time for a stronger flavour.

I found the recipe was a little clunky to work out, but after cooking it once will be easy next time. I was very very lucky not to chuck all the stock - i was a bit thick and wondered were the reserved stock came from. Luckily I read far enough in advance to work it out!

Exactly as recipe.  It tastes sooooooo good.  Will NEVER NEVER NEVER EVER buy cheap sulphur dioxided supermarket crap again.

I have a very bad reaction to sulphur dioxide and the last time I accidently ate supermarket mince, confined to bed with a migraine for a day.

This solves all my problems, and everyone will LOVE IT Smile

Delicious.. Definitely my go to recipe for Mexican now. So tender and much nicer that hard chunks of meat.

I cooked the beef for 5 mins less than stated as we like it that way.

This is AMAZING!!! Thank you so much for sharing this recipe. The only thing that mine needs is a bit more salt but it's only because I usually don't add much when cooking.
