Pete's scotch eggs

  • 10 eggs
  • 8 pork sausage, raw, 8 large or 10 standard
  • 1 heaped tsp Garlic powder
  • 1 heaped tsp Onion powder
  • 2 pinch Nutmeg
  • 3-4 sprigs dill, fresh
  • 3-4 sprigs parsley
  • 1 level tbsp English mustard

Recipe's preparation

    Boiling eggs
  1. 1. Pop 8 eggs into your steam basket. If you have a TM6 basket use the egg boiler mode and set to soft.
    2. Place steam basket into mixing bowl. Measure 400g of water into bowl.
    3. Steam for 8 mins/Varoma/spd1.
    4. When finished remove and run under the cold tap and set aside.

  3. 1. Mill the herbs for 6 secs/spd 7.
    2. Remove the sausage mince from the cases and add the mince to the bowl.
    3. Add the garlic powder, onion powder, nutmeg and mustard.
    4. Mix 20 secs/spd 4 reverse.
    5. Set bowl aside.
    6. Peel the cooked eggs.
    7. In the meantime add your crumb mix to a shallow tray. Beat the 2 reamining eggs into a bowl.
    8. Wet your hands and flatten some of your mince mixture into your palm. Lay your egg onto the mixture and form the mince around the egg adding more mince if you need.
    9. Roll the wrapped egg gently into the egg mix then crumbs and sit on a plate.
    10. In the meantime heat some oil on the stovetop or heat a deep fryer.
    11. Once the eggs are ready and the oil is hot drop them into the hot oil and fry for 3-4 minutes.
    12. Drain on some paper towel.
    13. Serve hot or cold. Great for picnics with some cheese, pickled onion and chutney.

Tip

You can change the herbs up for this recipe depending on what you like. Try chives or go for an asian fusion with some chilli and coriander. You could also use mince but the sausages are a nice fine wet mix that wraps thinly around the egg. The crumbs can be panko but go for something that's going to give crunch. Enjoy : )
