Ingredients

Best ever quiche

  • 195 g plain flour, 1 1/4 cups
  • 1 level tsp sugar
  • 1/2 level tsp salt
  • 125 g Butter, Small cubes cold
  • water, Upto 1/4 cup
  • 175 g bacon, Rindless
  • 2 onions, Brown
  • 1 level tbsp olive oil
  • cheese, 2 Cups grated
  • 6 eggs, Large
  • 300 cream, Mls
  • Milk, 1/2 Cup
  • dashes Nutmeg
  • pepper, ground

Recipe's preparation

  1. Preheat oven to 160°

    Mix dry ingredients 20 seconds speed 5, until look like bread crumbs.

    With machine running add upto 1/4 cup cold water. Stop as soon as dough forms.

    Roll into ball and flatten into disc wrap in silicon mat and place in fridge.

    Cut onions into 1/4's place in bowl speed 4 for 5 seconds. Chop bacon i prefer to do this by hand

    Saute bacon and onion in oil speed 4mins, steaming temp, mc off. Leave to cool.

    Add eggs, cream, milk, nutmeg and pepper. Mix speed 4, 10sec

    Roll out pastry on silicon sheet to fit in large quiche dish.

    Place cheese in pastry shell, then bacon, onion Mix and finally egg mix.

    Bake for 75 minutes
