Ingredients
Caramelised Onion & Feta Tarts
- 650 grams red or brown onions, sliced into half moons
- 50 grams oil
- 50 grams balsamic vinegar
- 25 grams Vegetable stock paste
- 75 grams brown sugar
- 2 sheets Shortcrust Pastry
- 100 grams feta cheese, crumbled
- 2 eggs
- 125 grams cream

- Pre-heat oven to 180° C.
- Add onions, oil, balsamic vinegar and vegetable stock to bowl. With simmering basket in place of measuring cup, cook 30 min/Varoma/Reverse speed 2. Scrape the bottom of the bowl well with spatula.
- Add brown sugar and cook for a further 5 min/Varoma/Reverse speed 2, or until cooked to your liking. Transfer to a bowl and set aside to cool. Do not wash the bowl.
- Depending on your cutter you will get 9-12 rounds per sheet of pastry. I gently rolled out the pastry to get it approx 2cm longer and cut 12 rounds from each sheet. Place rounds into greased patty tins.
- Add eggs and cream to mixing bowl. Blend 10 sec/speed 4.
- Spoon approximately a heaped teaspoon of onion mixture evenly into cases and top with crumbled feta.
- Spoon 1/2 Tablespoon of egg mixture over the feta - Don't overfill !!
- Bake for 20 minutes, or until golden and puffed.
- Transfer to a wire rack.
Tip
To save time you can precook the caramelised onions and store in the fridge. I do suggest cooking them outside or a well ventilated area !!!
The caramelised onions is double what you need for 2 dozen tarts - either double the number of tarts or use on cheese boards, burgers etc, etc !!

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
