Ingredients
Banana, Coconut & Walnut Loaf With Cream Cheese Frosting
Loaf Ingredients
- 250 grams plain flour
- 1/4 tablespoon salt
- 1/2 tablespoon cinnamon
- 5 grams bicarbonate soda
- 50 grams walnuts
- 60 grams melted butter
- 4 Bananas (medium)
- 100 grams brown sugar
- 80 grams icing sugar
- 15 grams Shredded coconut
- 1 egg
- 2 teaspoons vanilla extract
Frosting
- 110 grams cream cheese, Softened
- 55 grams Butter, Softened
- 1 C Icing Sugar

- Preheat oven to 180.
Add Plain Flour, Salt, Cinnamon & Bicarb, mix 5 seconds speed 4 & set aside.
Chop Walnuts 2 seconds, speed 4 & set aside.
Melt Butter, 80 degrees, 2 mins speed 4 & set aside.
Combine Brown Sugar & Icing Sugar, 10 Seconds on speed 2 then gradually add melted butter egg & banana, mix for 10 seconds on speed 3.
Add Flour & mix 1 min speed 2.
Scrape down the bowl then add Walnuts & Coconut mix 15 seconds speed 2.
Pour into a greased or baking paper lined loaf pan.
cook for 50-60 mins or until the top is golden brown & when the skewer comes out clean.
Let cool before frosting. - Cream together the Butter & Cream Cheese for 20 seconds speed 5.
Add the Icing Sugar in two batches & combine 20 seconds speed 6.
Once frosted you you can add some lightly chopped Walnuts.
