Wet Ingredients
- 160 g Butter, Cubed
- 125 g golden syrup
- 260 g brown sugar
- 1 --- egg
- 250 g Milk
Dry Ingredients
- 250 g flour
- 1 level tsp baking powder
- 1 level tsp bicarbonate of soda
- 2 level tsp Pepper & Me Bakers Blend
- 3 heaped tablespoons Pepper & Me Ginger Spice Mix

- Preheat oven to 170°C. Line a loaf tin with baking paper and set aside.
- Melt wet ingredients
Place butter, golden syrup and brown sugar into mixing bowl.
Heat 3 min | 60°C | speed 2
Scrape down sides of bowl with spatula. - Add milk and egg
Add milk and egg.
Mix 10 sec | speed 3 - Add dry ingredients
Add flour, baking powder, baking soda, ginger spice mix, lemon juice and milk powder.
Mix 10 sec | speed 4
Scrape down sides and repeat 10 sec | speed 4 if needed. - Bake
Pour mixture into prepared loaf tin.
Bake for 60 min at 170°C, or until a skewer inserted in the centre comes out clean. - Cool and serve
Allow to cool slightly before removing from tin. Serve warm or at room temperature with butter."Slow Cooking"
