Ingredients
Gluten free chocolate muffins
- 190 g gluten free all-purpose flour
- 200 g white sugar
- 5 g baking powder
- 5 g baking soda
- 1/4 teaspoons xanthan gum, omit if your GF blend already has it
- 1/4 teaspoons salt
- 50 g cocoa powder
- 2 eggs, about 110 g total, room temp
- 80 g melted butter, or dairy-free alternative like Nuttelex
- 240 g Milk
- 5 g vanilla extract
- 90 g chocolate chips, plus extra for topping

- Preheat oven to 175 °C
- 190 g flour
200 g sugar
5 g baking powder
5 g baking soda
1 g xanthan gum (if using)
2 g salt
50 g cocoa powder
Mix 10 sec / Speed 5.
Scrape down sides. - Add wet ingredients:
2 eggs
80 g melted butter (cooled slightly)
240 ml milk
5 ml vanilla extract
Mix 20 sec / Speed 4 until just combined.
Scrape down sides. - Add 90 g chocolate chips
Fold5 sec / Reverse / Speed 2 (just until evenly mixed). - Spoon batter evenly into muffin liners (about 1/2 full).
Sprinkle a few extra chocolate chips on top.
Bake 15-18 minutes, until a skewer comes out clean. - Let muffins cool10 min in tin, then transfer to a wire rack.

Don’t over-mix — just combine until smooth for a tender crumb.
You can replace butter & milk with coconut oil and almond milk for dairy-free.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -
