Ingredients

  • 180 g Dark cooking chocolate, broken in pieces
  • 180 g milk chocolate, broken in pieces
  • 150 g allens red frogs, cut into 5 - 8 mm pieces
  • 100 g white marshmallows, cut into quarters
  • 125 g Turkish delight, Rose Flavoured
  • 90 g macadamia nuts, halved or quartered
  • 40 g Shredded coconut

Recipe's preparation

    Thermo Cazza's Rocky Road
  1. Prepare the tin.
    Grease your tin with light olive oil spray and insert Glad Bake baking paper. Doing this will make it easier to remove from the tin after it is set. I use a skinny ceramic tray with deep walls so that they can be cut into smaller rounds.
  2. Prepare the filling. Place a medium-sized bowl on top of the lid and weigh the following ingredients:

    150g Allens Red Frogs cut into small pieces
    100g White Marshmallows - quartered
    90g Macadamia nuts - roughly chopped
    125g Turkish Delight - cut into 1 cm pieces.
    40g Shredded coconut

    Combine all ingredients by hand and set aside.
  3. To the bowl, weigh 180 g dark cooking chocolate, broken into pieces
  4. To the bowl, weigh 180g milk cooking chocolate, broken into pieces.
  5. Place the measuring cup on the lid. Grind Chocolate - 6 seconds/speed 8
    Scrape the sides of the bowl with a silicone spatula. Repeat if needed.
  6. Melt the chocolate (Measuring Cup off) – 3 mins / 60 degrees / Speed 1 - add extra time if needed until chocolate is melted.
  7. Carefully place the reserved rocky road filling mixture into the melted chocolate in the TM bowl.
    Mix gently, 20 seconds / Reverse Speed 1 (MC on)
  8. Pour and press into the prepared tin
    Allow at least 1 hour for the chocolate to completely cool down and set.
    Once set, cut up into desired sizes and enjoy!

    Lasts in the pantry for a good week or two!

Tip

Variations – use different chocolate combinations to suit your taste.

Filling variations - different nuts or no nuts at all for those with allergies. Use a biscuit instead.

Make a hot chocolate drink after making this with the leftover chocolate in the bowl – heat up with some milk added – blitz and strain - then enjoy your hot drink!

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
