Banana snack bar

  • 85 g raw cashews
  • 50 g Butter
  • 120 g apple
  • 10 g lemon juice
  • zest of 1/2 a lemon
  • 2 ripe bananas
  • 1/2 level tsp cinnamon
  • 50 g Desiccated Coconut
  • 65 g oats

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Line a 25cm square slice tin with baking paper and preheat oven to 180℃
  2. Place cashews into mixing bowl - 4 sec/speed 7
    Transfer to a bowl and set aside.
  3. Add butter to mixing bowl - 2 min/70℃/speed 1
  4. Add apple to bowl - 4 sec/speed 4
  5. Scrape down sides of bowl and add ground cashews, lemon juice, lemon zest and bananas - 8 sec/speed 4
  6. Add cinnamon, coconut, oats and egg - 8 sec/speed 4
  7. Pour into prepared baking tin and bake for 20 minutes or until golden on top. Cool in tin then cut into pieces.
