- 1/2 onion
- 70 gram Cheddar cheese, Grated
- 70 gram feta
- 50 grams parmesan, Grated
- 20 gram baby spinach
- 150 grams bacon, Diced
- 30 grams olive oil
- 300 gram Self Raising Flour
- 250 gram Milk
- 2 eggs
- 1 pinch salt & pepper
- 100 grams sun dried tomatos
Preheat oven Convec 180 degrees.
Grate cheddar and parmesan cheese, set aside. 8 seconds speed 8.
Add Spinach & Sun Dried Tomatoes to Bowl. Press Pulse 3 times. Set aside.
Add onion and bacon to the bowl chop 3 seconds speed 7. Add oil and saute 2 mins, varoma, speed 1.
Add Self Raising Flour, Milk, Salt & Pepper and Eggs. Mix 10 seconds, speed 6.
Add 3/4 of the cheese mixture, feta, tomato and spinach mix. Mix 10 seconds speed 6.
Spoon mixture into muffin tin or muffin casings. Add sprinkle remaining cheese and a piece of baby spinach on top for decoration. Cook 30 mins Convec 180.
