Bacon, Feta, Spinach savory muffins

Ingredients

onion

  • 1/2 onion
  • 70 gram Cheddar cheese, Grated
  • 70 gram feta
  • 50 grams parmesan, Grated
  • 20 gram baby spinach
  • 150 grams bacon, Diced
  • 30 grams olive oil
  • 300 gram Self Raising Flour
  • 250 gram Milk
  • 2 eggs
  • 1 pinch salt & pepper
  • 100 grams sun dried tomatos

Recipe's preparation

    Mixture
  1. Preheat oven Convec 180 degrees.

     

    Grate cheddar and parmesan cheese, set aside.  8 seconds speed 8.

  2. Add Spinach & Sun Dried Tomatoes to Bowl.  Press Pulse 3 times.   Set aside.

  3. Add onion and bacon to the bowl chop 3 seconds speed 7.  Add oil and saute 2 mins, varoma, speed 1.

  4. Add  Self Raising Flour, Milk, Salt & Pepper and Eggs.  Mix 10 seconds, speed 6. 

  5. Add 3/4 of the cheese mixture, feta, tomato and spinach mix.  Mix Counter-clockwise operation 10 seconds speed 6.

  6. Spoon mixture into muffin tin or muffin casings.  Add sprinkle remaining cheese and a piece of baby spinach on top for decoration.   Cook 30 mins Convec 180.

    Absolutely delicious. Only change - put all cheese into mixture, then sprinkled tops with a little extra parmesan, and dusted with fine mixed herbs. Oh, forget to put the onion in but was fine Big Smile Big Smile

    A good lunch alternative!

    I am so bored with sandwiches I made these for the 2nd time for my lunch today. Yummy and easy.

    I found 30 mins way too long, the topping was going black after 25 mins. (Could be my oven is too hot though).
