Bacon, Leek and Sundried Tomato Mini Quiches

  • 1 leek, Sliced
  • 4 Rashers of Bacon, Sliced into pieces
  • 1 level tablespoon water
  • 50 grams sundried tomatoes
  • 120 g Cheddar cheese, Cubed
  • 6 large eggs
  • 1 MC of full cream
  • 1 MC of full cream milk
  • Salt and pepper to season as desired

Approx 20 patty cups

Recipe's preparation

    Bacon, Leek and Sundried Tomato Mini Quiches
  1. Preheat oven to 180c (fan forced)

    Put sliced Leek, Bacon, sliced Sundried Tomato and water into TM bowl Varoma/5 minutes/Speed 1. Then put all this into the Steaming Basket to cool down and allow liquid to drain away.

    Add Cheese to bowl (no need to clean) and chop 3 seconds/Speed 7.

    Add Eggs, Milk, Cream, Salt and Pepper to TM bowl and mix 20 seconds/Speed 2.

    Put patty cups into a muffin tray and scoop approx 1 decent tablespoon of Bacon mixture into the bottom of each patty. Pour egg mixture over.

    Bake 180c for 30 minutes. Can depend on oven so keep an eye on it!

    i used a real tomato instead of semi-dried and they still tasted great, although i think next time i would str through the egg and bacon mixtures together.
