Filling
- 2 garlic cloves
- 2 onions, peeled and quartered
- 30 grams Butter
- 700 grams Chicken thigh fillets, cut into 2cm cubes
- 1 tablespoon TM chicken stock
- 100 grams water
- 2 tablespoons cornflour mixed to a paste with a little water
- 1 leek, large, sliced
Pastry
- 200 grams P Flour
- 200 grams SR flour
- 1 teaspoon salt
- 220 grams unsalted butter, cubed
- 10 grams milk powder
- 200 grams cold water

Recipe's preparation
Place garlic and onions into mixing and chop for 3 sec/speed 5.
Add butter and cook 5 min 100 degrees/"Counter-clockwise operation" /speed 1.
Add leek and chicken and cook for 5 min/Varoma/"Counter-clockwise operation" /"Gentle stir setting" .
Add water and TM stock and cook for 20 min/100C/"Counter-clockwise operation" /"Gentle stir setting" .
With 10 sec to go add cornflour mix through opening in lid may be adjusted if you think mixture is not thick enough for pie. Taste and add seasoning to your liking.
Preheat oven to 200C.
7. Place flours, milk powder and salt into mixing bowl and mix 2 sec/speed 5.
8. Add butter and mix 10 sec/speed 4.
9. Add 150g of water combine for 20 sec/"Closed lid" /"Dough mode" . Addrest of water if pastry mix looks too dry.
10. Tip out onto Thermomat bring together and cut in half. You can freeze this or save in fridge to make another pie.
11. Roll out 1 half of pastry place into springform tin making sure pastry comes to top of tin, add cooled filling and cover with puff pastry sheet, glaze with egg wash and bake in oven for 30-40 minutes.

Tip
Instead of puff pastry top you can use mashed potato with a bit of grated cheese on top very nice.

This is a fantastic recipe, however, after reading the other comments I doctored it up a bit to suit my taste. I omitted the water and used 50g white wine and I used chicken breast because I don't like thighs and bulked it up with carrot and celery, chopped with the onion and garlic. I made it into 6 single serve pies, but didn't use the pastry recipe, I used short crust on the bottom and ready made puff for the top. This is a keeper, thank you.

Delicious. I added bacon and sweet potatoe. Decreased onion and leek as kids not overly keen on these. Left out milk powder in pastry, turned out fine. Halved the water content for filling and served when warm rather than piping hot, and filling perfect thickness. Made 8 small pies. Loved by all.

I made a GF pastry from a different recipe and used this one for the filling. Great comments and wonderful result! I used half the amount of water than indicated, and only had 400 grams of chicken so threw in two sweet potatoes as well. Consistency was excellent

Have adjusted recipe and decreased water by half after reading comments I usually leave pie to cool down and cut it just warm so filling seems to thicken more. So for everyone who likes it hot hope this helps

Easy recipe and was enjoyed by all.
Inwill add however that after reading comments, I also only used half the liquid, kept mc off and added a dash of cream. I still found that it was way to runny and I then strained the filling before placing into pie. The extra liquid however was delicious served over rice!

Flavour was delicious. I added mushroom, sweet potato and celeriac. When I cut it the filling ran out of the pie like a soup will make it again but will completely leave out the water and see if that helps.

I will be making this again. I substituted the butter with nuttelex as I'm making one for a friend who's child has a dairy allergy and it turned out really well. Had to use 3 tbsp of cornflour and still wasn't thick enough, so will try with less water next time. I didn't bother with the puff pastry and just used the recipe pastry for the top which worked really well

I made this tonight-quite loosely following the recipe as i added bacon to the onion and garlic step, added quite a few mushrooms to the chicken step, and for the water step i added half water half white wine. However i didn't thicken the 'gravy' enough that aside it was absolutely divine! !
My 11 year old daughter made
My 11 year old daughter made this for dinner and we loved it! We strained off some of the liquid from the pie filling and used it to cook potatoes in to make a delicious mash for another meal. Am sharing it with other TM owners.

this was a huge hit with the family, man folk loved it and had lunch for three days (i made mini ones as well as one big pie), teenage said it was "cool", and fussy youngest ate nearly all his dinner this night (we usually struggle for 1/10th)!
i used mushrooms instead of leeks, and cornflour instead of plain; and i am going to make again adding broccoli and/or sweetcorn, ths was really good pie filling,
