Ingredients

Mixture

  • 150 grams Butter
  • 90 grams polenta
  • 230 grams SR flour
  • 110 grams castor sugar
  • 3 eggs
  • 240 grams Creamed Corn
  • 210 grams Milk

Recipe's preparation

    Method
  1.  

    Pre-heat oven to 180 degrees

     

    Melt butter for 1 miunte 90 degrees Speed 3

     

    Scrape down the sides (melt for longer if not completely melted)

     

    add polenta, flour, sugar and eggs and mix for 5 seconds on speed 4

     

    add the creamed corn and milk and mix for 5 seconds on speed 4

     

    DO NOT OVER MIX

     

    Divide the mix into a muffin tray (will make 12-15 muffins)

     

    Bake for 15-20 minutes or until golden brown

    Delicious recipe 😍 i think next time for personal preference i will puree the creamed corn first and use a mini muffin tray because the slightly harder outside is a really nice texture! Love this recipe though!
