I also used a mini loaf tray (12 holes).
Turned out perfect! (Did 210c/fan forced for 15mins).
Only thing I will do differently next time is add some vegetable stock paste as needs a dash of saltiness and the flavour would be even yummier!!!

Super easy and delcious muffins. I grated my cheese in the Thermomix first and set aside before continuing on with the recipe. As others suggested I omitted the sugar and salt and increased the flour to 250g. I made 24 mini muffins and 10 medium muffins. Really yummy when warm.

Best Muffins Ever. Made
Best Muffins Ever. Made these just now and all I can say is WOW. I make a few changes, didn't add sugar & salt, but added chicken stock powder, also added 150gms ham and parsley instead of chives. Very moist and tasty. Husband can't stop eating them. Great recipe.
I reduced the amount of sugar
I reduced the amount of sugar for my second batch as the mixture for the first batch was too sweet and I needed more cayenne pepper and even added chilli.
Added an additional 50g of
Added an additional 50g of flour and used 2 shallots, 1 grated zucchini and 50 g frozen corn. Very tasty - cross bstween muffin and frittata.
I made these for school
I made these for school lunches.... they didn't last, the kids ate them before they could make the lunch boxes. Which in my house is amazing, just about to make my 2nd batch. I did also add spring oinons and capsicum!!!
I accidentally put extra
I accidentally put extra flour (40-50g) in the last batch I made and that improved the texture
Made 2 batches for freezing
Made 2 batches for freezing for school lunches, although they are so tasty I think hubby will devour them before i get to use for lunches. Thanks for recipe
These are nice but don't rise
These are nice but don't rise as much as I expect with a muffin- more a frittata or quiche type texture but still tasty.
