Ham & Cheese Muffins

Ingredients

12 piece(s)

  • 200 grams SR flour
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • 1 pinch cayenne pepper
  • 1 egg
  • 250 grams Milk
  • 200 grams grated cheese
  • 100 grams ham, finely diced
  • 100 grams chives / spring onions, finely sliced

Recipe's preparation

  1. Add flour, sugar, salt, cayenne, egg and milk to bowl. Mix 10 seconds / speed 4. Scrape down and ensure mix is combined.

     

    Add cheese, ham and chives/spring onion and mix 5 seconds / Counter-clockwise operation / speed 4.

     

    Spray muffin tin and spoon mix in. Bake at 210C for 15 minutes. Should be golden brown on top and coming away from the edge of the tin when baked.  Cool in tray for 5 minutes before turning out on to wire rack to cool.

     

    Makes 12 standard muffins.

Tip

Makes approx 40 mini muffins, reduce cooking time to 10 minutes.

Can be frozen for up to 3 months.

The amount of flour depends on what sort of texture you are after, must use a minimum of 200g but if you want a more muffin/cake texture up to 250g.

    I did a few things different.
    Half tasty half parmesan as that's what I had
    2 eggs
    230g flour
    half tsp of baking powder
    190 degrees for 15 min

    Hi guys! Just cooked this and did as others suggested.. added the extra 50g...
    I used paprika/rosemary/brown onion/ham/chopped cherry tomatoes/ham (all left overs in fridge).. no salt or sugar and a free hand drop of olive oil for moisture...
    I also used a mini loaf tray (12 holes).
    Turned out perfect! (Did 210c/fan forced for 15mins).
    Only thing I will do differently next time is add some vegetable stock paste as needs a dash of saltiness and the flavour would be even yummier!!!

    Pretty good recipe! Took everyone's advice added 250 mg flour, one teaspoon of baking power, 2 pinches of cayenne pepper and left the sugar & salt out. Yummy!!

    Yum, but next time will add extra 50g flour and 1 tsp baking powder to make them rise more. Will also add 1 tsp vege stock paste as I use this in all savoury dishes. I baked in muffin cases and they didnt turn out, so will oil spray them next time. ***

    This would have to be the best recipe for Cheese & Ham muffins I have tried. Changes made:
    I blitzed the cheese in the TM first
    Used Ground Paprika instead of Cayenne Pepper
    Left out the spring onions.

    Super easy and delcious muffins. I grated my cheese in the Thermomix first and set aside before continuing on with the recipe. As others suggested I omitted the sugar and salt and increased the flour to 250g. I made 24 mini muffins and 10 medium muffins. Really yummy when warm.

    Best Muffins Ever.  Made these just now and all I can say is WOW. I make a few changes, didn't add sugar & salt, but added chicken stock powder, also added 150gms ham and parsley instead of chives.  Very moist and tasty.  Husband can't stop eating them.  Great recipe.

    I reduced the amount of sugar for my second batch as the mixture for the first batch was too sweet and I needed more cayenne pepper and even added chilli.

    I made these for school lunches.... they didn't last, the kids ate them before they could make the lunch boxes. Which in my house is amazing, just about to make my 2nd batch. I did also add spring oinons and capsicum!!!
