  • 150 g Butter, softened
  • 5 eggs
  • 600 g Milk
  • 2 piece broccolini, chopped small
  • 1/2 bunches asparagus, chopped small
  • 1/2 red onion, sliced fine
  • 100 g pumpkin, small diced
  • to taste Salt and pepper

Recipe's preparation

  1. Measure milk, butter, pastry mix into bowl.
  2. Add eggs to bowl and mix 20 seconds speed 4 MC on.
  3. Pour mixture into prepared greased pan. You can use a quiche pan or lamington pan.
  4. Sprinkle all remaining ingredients into mix, add cheese last.
  5. Gently mix with spatula.
  6. Place in 180c preheated oven for 45 - 50 minutes.
  7. Remove once golden brown and a knife comes out clean.
  8. Serve warm or cold. Great with a green salad. Enjoy for lunch, a light dinner or kids lunchbox.

Tip

I also cook this in two small pans for 35 mins.
Leave bacon out for a vegetarian option.
