  • 50 grams pine nuts
  • 2 cloves Oven Roasted Garlic, skin removed
  • 350 grams Oven Roasted Pumpkin, skin removed
  • 1 Roasted Red Capsicum, skin and seeds removed
  • 1 Large handful fresh basil leaves, washed and torn
  • 2 free range eggs
  • 60 grams cold pressed oil (grapeseed, macadamia, peanut, light olive))
  • 250 grams Natural Plain Yogurt
  • 300 grams Self Raising Flour
  • 75 grams wholemeal flour
  • 120 grams Greek / GoatS Milk Feta Cheese, Crumbled

Recipe's preparation

    Muffins
  1. 1.  Preheat oven to 180 degrees

    2.  Grease/line two 6 hole Texas muffin pans

    3.  Place pine nuts in TM 6 mins/Varoma/Speed1/bowl Counter-clockwise operation

    4.  Remove and set aside

    5.  Place garlic, pumpkin, pepper, basil, eggs, oil and yogurt in TM bowl and combine 4 seconds/Speed 5

    6.  Add flours and blend 5 seconds/Speed 5, scrape down sides.

    7. Place feta and toasted pine nuts into TM bowl, season with black pepper to taste and combine 5 seconds/Speed 4/Counter-clockwise operationFinish mixing with spatula by hand if necessary.

    8.  Using the spatula pour into muffin tins till 3/4 full

    9.  Bake at 180 degrees for 35 - 40 mins or until a skewer comes out clean.

Tip

I oven roast trays of vegetables at the start of the week so that they are on hand to add to dips/muffins/salads and pasta dishes.

You can substitute 2 tbsp/ 40g fresh basil pesto for the fresh basil and Feta cheese, add pesto to the wet ingredients in step 5.

For a variation, you can add 2 tbsp/40g sundried tomatoes to the wet ingredients in step 5.

If necessary, individually wrap in cling film and freeze on day of baking, pop frozen into lunch boxes and they will be defrosted in time for lunch.

    Very tasty. Assumed that pepper in Step 4 is the capsicum. Quantities perfect. Will be  great for lunch treat fillers.  Thanks for posting.
