If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. First grate the cheese by dropping onto running blades at speed 8.  Set aside.

    2. Add butter and flour to TM bowl and with measuring cup inserted, turbo pulse twice

    3.  Add all remaining ingredients and mix for 10 seconds on reverse blade, speed 3.  Scrape down sides of the TM bowl with spatula and repeat.

    4.  Pour the muffin mixture into mini silicone muffin trays and bake in a preheated oven on 180C for approx. 18 - 20 minutes or until well risen and golden.

    5.  Allow muffins to cool for 10 minutes then turn out onto a wire rack to cool completely.

Tip

When scraping down the sides, make sure to free all the bacon pieces from around the blades as they tend to clog together in a lump.

These are perfect to serve warm at a buffet or party.  They can be made ahead of time and frozen.  Thaw and gently reheat before serving.
