Sunny Sesame Crackers (Clone Sammy & Bella's Tostadas)

  • 200 gram quinoa seed or
  • 100 gram chia seeds
  • 2 tablespoon sesame seeds
  • 2 tablespoon sunflower seeds
  • 140 gram cold water

Recipe's preparation

    1. Preheat oven to 200°C. Line a baking tray with baking paper and set aside.
    2. Place quinoa and chia seeds into mixing bowl and mill 30 sec/speed 9. Scrape down sides of bowl.
    3. Add sesame seeds, sunflower seeds and water and combine 6 sec/speed 6, or until a stiff dough forms.
    4. Place dough on your Thermomix silicone baking mat and cover with a sheet of baking paper. Using a rolling pin, roll out to 1-2mm thickness. If the dough is too dry to work with, sprinkle with a little extra water and proceed as above. Next, using your MC as a cookie cutter, cut out your circular cracker and place on prepared baking tray. Repeat with dough offcuts until all dough has been used.
    5. Bake crackers for five minutes, or until just golden. Set aside and allow to cool

    I made these today (half quantity) with limited success.  I found the best way to roll the dough out thinly enough was do do it inI small batches rather than the whole quantity at once.  I cooked them for about 10 minutes and still had to dry them out in the cooling oven to crisp them up.  If I made them again I would add some flavour, such as a sprinkle of salt or some dried herbs.  The half batch yielded about 3 dozen.
