Sweet potato and mixed seed rolls

Ingredients

Dough

  • 1/2 cup milk
  • 100 grams Butter
  • 60 grams sugar
  • 1.5 teaspoons yeast dry
  • 400 grams bakers flour
  • 2 teaspoons Gluten flour, optional..gives a better rise
  • 1 teaspoon bread improver
  • 3/4 teaspoon salt
  • 1 Cup sweet potato, peeled, cooked and chopped. About 240g cooked weight
  • 20 grams olive oil
  • 85 grams mixed seeds (pepitas, sunflower seeds)

Recipe's preparation

    Preparation
  1. 1. Add chopped sweet potato toClosed lid.

    2. Blitz sp4/ 10 seconds. Set aside.

    3. without cleaning the Closed lid, add milk and set to Varoma, sp 2/3 minutes to just scald the milk. Just under boiling.

    4. Add butter and sugar. Blitz sp2 until melted.

    5. Leave to cool to 37C.

    6. Add yeast, blend sp3/10 seconds

    7. Add all remaining ingredients and blitz sp6/20 seconds to combine. If the mixture is very wet, i.e sticking to the bowl add heaped tablespoons of flour until you get a soft dough. May still be a little sticky..that's ok

    8. Rest covered on a well floured silicone mat for 15 minutes.

    9. Flaten soft dough to a 30x30cm rectangle and roll up from long end. Cut into half and then each half into 8 pieces. Or leave one half as a log and freeze for later

    10. Shape each piece into a ball and place into a well greased pan of choice.

    11. Prove covered in a warm spot for 45 minutes or until doubled.

    12. Glaze tops with extra milk and a sprinkle of sesame seeds (optional) and bake in a 160C oven for 30 minutes or until hollow when tapped. These burn easily so keep a close watch on them and turn the oven down if neccessary.

    Cool on an oven rack.
