Steph's Zhushed Up Hummus Platters
- 2 cloves garlic
- 1 can Canned Chickpeas
- 50 g lemon juice
- 15 g tahini
- 20 g olive oil
- 1 pinch salt
- 100 g chilled water
Toppings
- 50 g caramelised onion
- 25 g cherry tomatoes
- 4 heaped tablespoons micro sprouts
- 1 heaped tablespoon dukkah
- 1 pinch sumac
- 1 level teaspoon olive oil

- Put the garlic and chickpeas in the bowl and blend to a stiff paste 10 sec/speed 8[/b]
Add lemon juice, tahini paste, olive oil and salt 1 min/speed 4
While the machine is running, slowly add the chilled water throught the lid
If necessary add more time - you want a smooth and creamy paste
Serve hummus on platter of choice
Decorate with toppings of choice (see example given)
Make the Hummus
Tip
You can make your own caramelised onion, tahini, dukkah and seeded crackers - see Cookidoo® for recipes. These are all great pantry staples to have at the ready.
Other great toppings are fresh herbs (eg parsley, chives) pomegranate arils, toasted chickpeas in the oven with oil, seasoning and a spice blend eg curry powder.
If desired you can add some cooked or roasted beetroot for a pink hummus which looks great decorated with fresh herbs chopped finely and crumbled feta.
This makes a great meal when combined with a soup of choice.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -
