  • 2 teaspoons dried instant yeast
  • 600 grams white bakers flour
  • 2 teaspoons salt
  • 2 teaspoons Bread Improver (Optional)

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Recipe's preparation

  1. To your Thermomix bowl - add water, sugar, yeast, flour, salt, bread improver & oil. Knead 6 minutes/dough function.
  2. Transfer dough to a lightly floured Thermomat & cover. Let this rest for 15 minutes.
  3. Divide the dough into 12 x 80g portions, roll into tight balls, then arrange on a baking tray a few centimetres apart. You can make smaller, or larger rolls if you wish - see the recipe tips for examples.
  4. Cover, then place in a warm/humid location to proof/grow. You want the dough to increase x2 or x3 in size before baking - time will vary depending on temperature. Optional: just before baking top with cheese & bacon/ham!
  5. Preheat oven to 180° fan forced, then bake until golden brown - approx 20/25 minutes. Once cooked, transfer to a cooling rack immediately.

Tip

Dough loves a humid environment to proof/grow! Don't allow your dough to dry out or it will form a skin, & will refuse to grow further.


MAKING SMALL ROLLS...

    These were awesome! I was so pleased with how they turned out. I used two teaspoons of ACV instead of the bread improver. Made cheese and bacon toppings.

    DVAus:i am not the original poster but wanted to answer anyway. if I am using bacon, I very gently fry. If I am using ham I don't. This morning I made them using fried and cut up bratwurst sausage for something different.

    even though they are called cheese & bacon rolls you don't need to use bacon.

    This looks amazing! I'm so excited to make these. This may be an obvious/stupid question: but do you fry the bits of bacon a bit before putting on the rolls or do they cook through well enough in the oven if put on raw?
