Vegetarian Zucchini Slice

  • 1 zucchini, medium size
  • 1 sweet potato, small, approx 280g
  • 1 red onion, approx 110g
  • 200 grams flour, self raising
  • 150-180 grams Tasty cheese, cut in 3cm cubes
  • 30 grams olive oil

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. 1. Preheat oven 180°C.

    2. Line 20cm x 30cm lamington pan/dish with baking paper.

    3. Add cheese to mixing bowl and grate 5sec/sp7. Set aside in separate bowl.

    4. Add cut zucchini and chop 3sec/sp5. Tip into paper towel or clean tea towl and squeeze as much excess moisture out as you can. Add to bowl with cheese.

    5. Add pealed and roughly chopped sweet potato to mixing bowl, chop 3-5sec/sp5. Set aside with cheese and zucchini.

    6. Add halved onion, chop 3 sec/ sp 5. Scrape down sides of bowl and repeat if needed. Set aside with other ingredients.

    7. Add eggs, olive oil, salt and pepper(to taste). Blend 5 sec/sp 5.

    8. Add set aside ingredients and flour to mixing bowl. Stir 30sec/sp4/Counter-clockwise operation.

    9. Pour into prepared tin. Cook for 45 mins or until browned and cooked through.
