Thank you for the recipe. Love how it can be adapted to suit others' taste buds. Without the milk the cake is more dense, perfect to warm up and have with a dollop of yoghurt or cream. With milk they make light and fluffy muffins

I make this into muffins with a splash of milk, cooked for 20 mins at 180. Have done it with two mandarins, a mandarin and a banana or with the whole orange as suggested. I think it would probably work with a whole apple too. Half sugar as suggested by others.

Love this recipe and make it almost every week.

    Submitted by Tiak29 on 17. August 2018 - 19:44.

I made this tonight using a cream cheese frosting which got the thumbs up from everybody. The cake was nice however a little bitter. My advice would be to remove all the pith as much as possible and this may make it sweeter. I added poppy seeds also and will continue to do this and went along with the other comments and baked for only 50 mins plus halved the sugar.

All in all it was great just needs some tweaking.

just whipped this little beauty up for morning tea tomorrow! Always a favourite in our staff room 🤗
I halve the sugar, and bake for 50 mins at 170 degrees. I've also previously used two mandarins instead of an orange and it was delish 😛 and is awesome as patty cakes.
Lemon cream cheese frosting is perfect on top!

Like others I switched the recipe up a bit. 50 min cooking time, 2 small oranges whizzed for a little longer with butter reduced amount of butter to 160 g, added a tspn of vanilla, added pinch of salt, 1/2 tspn of bicarb soda, 50/60 ml of milk, in addition to the 300 grams of self raising added 60 grams of almond meal, cut sugar down to 110 grams sweet enough to eat as is but even better with cream cheese icing!! Absolutely devine!!

I added a 1/2 tsp of Bicarb soda and a dash of milk and this recipe turns out perfectly and oh so light every time. Can't keep it on the dish for long. Sometimes slice orange on bottom of cake tin and sprinkle sugar then pour in cake mix on top (using only 1/2 sugar for cake). Gosh it looks sooooo good and tastes as good as it looks. Thank you for this quick easy and very yummy recipe.

I’ve made this at least a dozen times now and it hasn’t failed me once. Awesome in muffin tins for school or as a whole cake for birthdays or afternoon tea.
Have on its own, with chocolate buttercream or cream cheese icing depending on the calling tmrc_emoticons.-)

Works just as well with Lemons too (although I did use two medium sized ones).

Absolutely fabulous! So moist & great flavour. I was intrigued that a WHOLE orange was required - wow, no peeling, no pith removal required! After checking the comments, I did add 3/4 of additional orange pulp rather than milk and chose a thin skinned orange. This beauty will be on my regular list, that’s for sure 👌🏻👏🏻

This recipe is fantastic! I made as muffins for school lunches. 17 minutes 160 degrees fan forced. I made half without poppy seeds and half with (just incase the kids didn't like poppy seeds) and kids loved them. I used a home grown large orange with a thin skin and cut the top and bottom off. I also added a splash of milk and a teaspoon of vanilla bean paste. I might try a little less sugar next time only but only because they are for school lunches.

    Submitted by jennar on 11. March 2018 - 08:40.

Just made this recipe as cupcakes! Only needed 22 minutes in the oven and then I iced them with a simple lemon icing using icing sugar and just enough lemon juice to disolve the sugar and make it smooth but still keep it not runny. Always a winner. I did add a little milk to it to make the batter a little runnier and easier to divide into cupcakes - about 2 heaped dessert spoons for each.

    Submitted by Cornelia1958 on 31. October 2017 - 18:34.

Just made this cake again after a 12month or so break from baking (due to expanding waistlines). This time I reduced both the sugar and butter (both to 125 grams) and in my opinion it was better than ever. It didn’t have the greasiness some people complain of. Also added 20ml milk and a little vanilla. Tested after 40 mins of cooking and was definitely ready, will try 5 minutes less next time. I used 2 small oranges - only the rind and the flesh, discarding the peel and white pith to prevent bitterness.

My husband has said 'don't use any other recipe, only ever this one!' And that's the way it's been since I found it about a year ago. Very slack in rating but this is amazing. I cut sugar to around 120g, we don't find it dry. I also make in large muffin tray (makes 12) & freeze for lunches, grandkids love it. Forgot to say that when I make the cake for birthdays I use a bundt tin & ice with orange butter frosting which I make thin enough to slightly drip down the side before setting. It looks great, a bit fancy!! A big winner. Smile

    Submitted by jennar on 3. October 2017 - 20:31.

Really simple recipe. I finished it off with a simple lemon icing as the last time I had this it just felt like something was missing. I used about a cup of icing sugar and enough lemon juice to make it a little 'liquid-y' to be able to drizzle over the top. I probably shouldn't have left it in the oven for another 5 mins as it came out almost dry (it didn't look done when I inserted a skewer) so next time I'll stick to the 50 mins baking time.
