Fantastic and flexible. Perfect with two oranges without the pith. Also worked with other citrus combos. Worked well as a cake, bundt, mini loaves and cupcakes.

    Submitted by Greywing56 on 27. January 2021 - 13:15.

This is my go-to quick cake for when I need to take a nice slice for a morning/afternoon tea. Whips up in ... well, 30 seconds, and comes out wonderful every time. Next time I will try adding either poppy seeds or dark chocolate chips. I bake in a slice tin and serve in littie squares. Be sure to use a naval orange as they have thin skins and no seeds. I also add a tbsp of milk which somehow helps reduce the bitterness.

Someone asked about whether you could make cupcakes out this recipe.....Yes you can I tried it the other day but only cook them for 20-25 min at the same temperature. I also substituted white sugar for S.B.Suggar. When cooled slightly I pricked the top with a skewer and made a syrup of 160g water (but I used the Orange juce from the orange then made up with the water), 180g S.B.Sugar, 2 tsp Honey and zest from 1 orange....Place all ingredients into cook 9min/100c/speed2. Allow to cool, pour some over cupcakes or large cake. Allow cakes to absorb syrup for a few minutes then pour the rest on. They are Yummy.

Yum. I Halved the recipe..and used 2 mandarines instead of half an orange..as they usually have less pith. It made 12 cupcakes.
I added chocolate chips and they were delicious. Super quick!

Made this with 3 small oranges, substituted the butter for 80g nuttlex & 80g oil, reduces the sugar by almost half. The cake / crumb was lovely and soft, not too try or wet. Only the cake had a slight bitterness to it, so will try remove pith next time. If I put an icing dressing on it maybe one wouldn't notice the slight bitterness

Whisked togethger some icing sugar and juice from half an orange and drizzled on top, and served with some double cream. NOTHING LEFT - people came back for 2nd's and 3rds!

Halved the sugar. Added 150 ml of kefir, but I think orange juice would work well.
Plus 2teaspoons of poppy seeds! And into muffin tray. Thanks! 🍰
