Made the cake with lemons, I used 2 whole with skin and 1 without skin (just flesh) and took out all the seeds. I substituted butter for olive 180g olive oil but found it's a bit heavy, I will try 50/50 of vegetable oil/olive oil. I used 170g sugar. It turned out ok, nice flavour but as I mentioned it's a bit heavy.

A Great Quick & Easy Orange Cake

I was looking for a quick cake to whip up for a neighbour's lockdown birthday and this was perfect.

I had to make it gluten free for her, so just substituted the SR flour for GF SR flour. It worked a treat.

Because I wanted to make a mini layer cake, I cooked it in a lamington/slice tin so that I could cut out a few circles.

The lady (who lives by herself) really enjoyed the cake.

    Thanks for a great recipe.

I tried it with toffee pudding sauce...got a bit too sweet so maybe will add less sugar to the sauce next time.

how many lemons did you use??

I did end up making this with lemons.I used x3 lemons in total. X1 with the skin on and x2 just the flesh, but I think next time I'll use x2 whole ones and x1 flesh only, X1 of my lemons wasn't very juicy. I made mini muffins so my cooked them for 30mins and they were perfect.I just really like the lemon flavour so that's why I would add the extra whole one and I made a lemon icing for the top too yum 🤤

    Submitted by Greywing56 on 27. January 2021 - 13:15.

This is my go-to quick cake for when I need to take a nice slice for a morning/afternoon tea. Whips up in ... well, 30 seconds, and comes out wonderful every time. Next time I will try adding either poppy seeds or dark chocolate chips. I bake in a slice tin and serve in littie squares. Be sure to use a naval orange as they have thin skins and no seeds. I also add a tbsp of milk which somehow helps reduce the bitterness.

Someone asked about whether you could make cupcakes out this recipe.....Yes you can I tried it the other day but only cook them for 20-25 min at the same temperature. I also substituted white sugar for S.B.Suggar. When cooled slightly I pricked the top with a skewer and made a syrup of 160g water (but I used the Orange juce from the orange then made up with the water), 180g S.B.Sugar, 2 tsp Honey and zest from 1 orange....Place all ingredients intoClosed lid cook 9min/100c/speed2. Allow to cool, pour some over cupcakes or large cake. Allow cakes to absorb syrup for a few minutes then pour the rest on. They are Yummy.
