      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Method
  1. Turn oven on to 170 degrees celcius (fan forced) and grease a mini muffin pan. Alternatively you can line it with mini cupcake papers.
  2. Add 2 large (or 3 small) bananas (approximately 220g - 250g), 130g of cubed, unsalted butter and 40g of raw sugar to the bowl. Mix for 5 seconds on speed 4. Melt the ingredients for 3 minutes at 90 degrees on speed 1.
  3. Add 30g almond meal, 20g dessicated coconut and 170g of self raising flour to the bowl. Mix for 10 seconds on speed 3. Scrape down the sides of the bowl.
  4. Add the egg and the vanilla essence and mix for 10 seconds on speed 4.
  5. Spoon the mixture into the mini muffin pan. Usually one heaped tablespoon per mini muffin works well. Bake in the oven for 10 minutes. Keep an eye on them, as all ovens are so different.

Tip

All bananas have different textures depending on how ripe they are, so be sure to adjust (add) the SR flour if the batter is runny.

White or brown sugar can easily be used in place of raw sugar.

This recipe easily makes large muffins, making sure you adjust the cooking time (longer) and oven temperature (lower) accordingly.
