Thermomix Shortbread
- 250 grams Butter, cold from fridge
- 300 grams plain flour
- 100 grams caster sugar
- 1 teaspoons Extra Caster Sugar

- Pre-heat the oven to 160 C /320F.
Line a 8" square baking tin with baking paper
Chop the butter in pieces and add to thermomix bowl, with the flour and sugar. Mix for 20 secs on speed 6.
Then use dough function/ 1 minute.
Tip the mixture into the tin. It will be quite crumbly, but don't worry. Press into baking tin to form a smooth mixture. Roll with a small glass to smooth the surface if necessary. Fork the top to prick holes in the surface, score the surface into fingers.
Bake in the oven for around 25 - 30 minutes until shortbread is just starting to go brown at the edges.
Remove from the oven. Use your knife to cut through the score lines all the way through to the bottom of the tin. Do this while still warm. Sprinkle over extra caster sugar.leave in tin until completley cooled. Store in a airtight container.
It will last for around 10 days on the counter top or up to 2 weeks in the fridge. or for 3 months in the freezer.

Tip
Don't skip pricking the top of the shortbread this helps it to cook evenly.
