Muffin Mix

  • 70 grams coconut oil
  • 100 grams Maple syrup
  • 3 eggs
  • 200 grams almond meal
  • 65 grams tapioca flour
  • 1/2 teaspoon baking soda
  • 1/4 tablespoon salt
  • 150 grams frozen berries (raspberry, blackberry or blueberry)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat the oven to 180 degrees C and line a 12-cup muffin tray with paper liners.

  2. Place the 40g of coconut oil for the crumble topping in the TM bowl and stir 2 minutes at 55 degrees, speed 1 or until melted.

  3. Add the remainder of the ingredients for the crumble topping and mix at speed 3.5 for 10 seconds.  Set aside.

  4. Place coconut oil into the TM bowl and stir 4 minutes at 55 degrees, speed 1 or until melted.

  5. Add maple syrup and eggs, and stir 10 seconds at speed 3.5.

  6. Add the almond meal, tapioca flour, baking soda, and salt to the wet ingredients and mix at speed 3, Counter-clockwise operation for 2 seconds, then for a further 2 seconds at speed 3, No counter-clockwise operation.  Scrape down the sides of the bowl with a spatula and stir once again for 2 seconds at speed 3, Counter-clockwise operation.

  7. Add the frozen berries and mix at speed 1, for 15 seconds, Counter-clockwise operation or until the berries are mixed through.

  8. Spoon the mixture into the prepared muffin tins and sprinkle with the crumble topping.

  9. Bake for 20 to 25 minutes, until slightly golden on top.
