Muffin Mix
- 70 grams coconut oil
- 100 grams Maple syrup
- 3 eggs
- 200 grams almond meal
- 65 grams tapioca flour
- 1/2 teaspoon baking soda
- 1/4 tablespoon salt
- 150 grams frozen berries (raspberry, blackberry or blueberry)
Crumble Topping
- 1 tablespoon coconut oil
- 40 grams Coconut sugar
- 1 tablespoon almond meal

Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Recipe's preparation

Preheat the oven to 180 degrees C and line a 12-cup muffin tray with paper liners.

Place the 40g of coconut oil for the crumble topping in the TM bowl and stir 2 minutes at 55 degrees, speed 1 or until melted.

Add the remainder of the ingredients for the crumble topping and mix at speed 3.5 for 10 seconds. Set aside.

Place coconut oil into the TM bowl and stir 4 minutes at 55 degrees, speed 1 or until melted.

Add maple syrup and eggs, and stir 10 seconds at speed 3.5.

Add the almond meal, tapioca flour, baking soda, and salt to the wet ingredients and mix at speed 3,
for 2 seconds, then for a further 2 seconds at speed 3,
. Scrape down the sides of the bowl with a spatula and stir once again for 2 seconds at speed 3,
.

Add the frozen berries and mix at speed 1, for 15 seconds,
or until the berries are mixed through.

Spoon the mixture into the prepared muffin tins and sprinkle with the crumble topping.

Bake for 20 to 25 minutes, until slightly golden on top.
