Recipe's preparation
Place all Muffin ingredients into bowl and mix speed 4-5 / 10sec.
Add in filling of choice, mix on reverse till just combined speed 4 / 5 sec.
place into muffin tray and bake 180c for 20-30 min, or until springs back when touched in the middle.

Tip
This recipe makes more then a standard muffin tray (12). I generally mix up my sizes, using a normal muffin tray, cupcake tray and mini muffins.
Mixture can be split before adding the fillings, so one batch can make a couple of different type of muffins.
Freeze well, if frozen same day they are cooked, and eaten the same day they've been defrosted.
I generally individually cling wrap and throw into freezer for easy lunchbox treats.
Savoury ones are nice slighly warmed with a little butter on them.

I followed the recipe exactly as listed... omitted the sugar and vanilla essence to make savoury muffins.. mixture was way too thick. I had to add an addition egg and easily another ½ - 1 cup of milk. .then added cheese and ham etc..

Family proclaim ‘they are better than cupcakes’ followed the recipe and divided into 2 bowls. Made 1 lot choc chip and the other mixed berry and white choc. Actually easier than cupcakes and I don’t have to ice these. Fantastic.

I went simple with choc and raspberry (frozen) however found the actual mixture a little bland. Will try some cinnamon in with it next time. Halved the sugar too.

Great recipe; thanks for sharing! I put choc chips in half of my batter. In the other half I added two peeled and finely diced red apples and sprinkled cinnamon and a little raw sugar on the top. I was worried that the uncooked batter had a very strong olive oil flavour but once cooked they were both delicious. It made 20 standard muffins in my tins. This will definitely become a regular 'go to' recipe and we'll be trying new flavours. Thanks again!

Lovely! I did half a batch and took the sugar down a little bit and added some chia seeds. For me it made 14 muffins in small size cupcake cases. Added fresh strawberries as my 'anything'. So tasty!

Best muffin base recipe ever Thankyou.!! I made zucchini, ham & cheese (omitted sugar and vanilla) blueberry and choc chip. Very moist And light. Some recipes can be dough-ey and tough. I halved the sugar and was sweet enough.

Reduced sugar by half with no complaints, did raspberry and shredded coconut, ham and cheese, and choc chip. Will defiinitely do again.
