Apple and Blueberry Muffins

Ingredients

  • 160 g self-raising flour
  • 150 g wholemeal flour, (or plain white flour)
  • 180 g Milk
  • 150 g raw sugar
  • 2 eggs
  • 70 g olive oil
  • 1/2 tsp baking powder
  • 1 can blueberries, drained
  • 2 apples, peeled, cored and chopped into cubes

Recipe's preparation

    Muffin Batter
  1. Place all ingredients, except the fruit, into the TM bowl and mix for 40 seconds on Speed 4 - 5

  2. Add the blueberries and apples

    Carefully mix in by hand using the TM spatula (I do the mixing by hand so the blueberries don't just turn to mush)

  3. Spoon the batter into a greased muffin tray and bake in a moderate oven for 20 - 25 minutes or until golden brown

    These were great.

    I subsituted olive oil for coconut oil, sugar for 75g honey, canned blueberries for 100g frozen blueberries. My mixture was a bit dense so I added another 50ml of milk.

    Made these without blueberries but with cinnamon (2 tsp) for breakfast this morning, and they were really delicious. I love cinnamon so I'll add some more next time, as it didn't come through that much with just 2 tsp. the kids loved them too, so I've saved some in the freezer to add to their lunch boxes (frozen, that way they'll be perfectly fresh at lunchtime  tmrc_emoticons.;)
