  • 2 apples - medium, peeled, cored and quartered
  • 90 grams Milk
  • 70 grams Grapeseed Oil, or vegetable / canola
  • 1 egg, large
  • 100 grams raw sugar
  • 85 grams brown sugar
  • 170 grams plain flour
  • 85 grams wholemeal self-raising flour
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 2 tsp baking powder

TOPPING

  • 50 grams raw sugar
  • 25 grams plain flour
  • 30 grams Butter
  • 1 tsp ground cinnamon

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Mixture
  1. Preheat oven to 180 and line a 12 hole muffin tray.

    Place apples in TM bowl and chop for 3 seconds on speed 4. Set aside

    Add milk, oil and egg to TM bowl and mix for 5 seconds on speed 4.

    Add the remaining muffin ingredients and mix for 10 seconds on speed 4. Scrape down sides then add the chopped apples into mixture and combine for 3-5 seconds on Counter-clockwise operation, speed 3.

    Divide mixture between the 12 whole muffin tray (they will be pretty full but this is what you want).

  3. No need to wash the bowl but make sure you have done a good job of getting out the mixture then add the topping ingredients into the bowl and mix for 10-15 seconds on speed 5. Sprinkle topping over the top of the muffins and bake for 15-18 minutes (my oven is 18 but I think it is on its way out!).

Tip

A great way to use up apples that have turned a bit floury and not that enjoyable to eat!

You could try cutting back the sugar a little in the recipe if your apples are sweet, let me know how you go..
