Apple Nut Cinnamon Muffins with Brown Sugar Cinnamon Topping

Muffin Mixture

  • 1 Large Granny Smith Apple, Peeled, Cored and Quartered
  • 55 g walnuts
  • 350 g Self Raising Flour
  • 110 g raw sugar
  • 1/2 teaspoon cinnamon
  • 75 g chilled butter, Cubed
  • 1 egg
  • 170 g Milk

Crumble Topping

  • 1 teaspoon cinnamon
  • 2 tablespoon brown sugar
  • 1/4 Cup of Flour butter mix

Recipe's preparation

    Muffin Mix
  1. Preheat oven 180 degrees Fan Forced.


  2. Line 12 Muffin case tray with paper Liners.


  3. Add walnuts to bowl and chop speed 5 for 4 seconds. Remove and set aside.


  4. Add apple to the bowl and chop speed 4 for 4 seconds. Put in the same bowl as the walnuts and set aside.


  5. Add flour, sugar and cinnamon to bowl and mix on g speed 5 for 6 seconds.


  6. Scrape down sides and add butter to the bowl and mis speed 6 10 seconds. The mix should resemble bread crumbs. Set aside in a separate bowl for later.


  7. No need to clean TMX bowl. Insert Butterfly into bowl and add the milk and egg. Whisk on speed 3 for 6 seconds.


  8. Remove Butterfly and add the apple walnut mix. Before adding the flour butter mix remover 1/4 cup of mixture. Once the rest of the mix is added to the bowl mix on speed 4 for 10 seconds.


  9. Use an ice-cream scoop to scoop even amounts of mixture into prepared muffin trays.


  10. Crumble topping
  11. Add brown sugar cinnamon and 1/4 of the flour butter mix and mix with spoon.


  12. Sprinkle this mix over muffins.


  13. Bake in over for 15 mins or until skewer comes out clean.
