  • 30g Linseeds
  • 2 apples
  • 1 egg
  • 80g oil (macadamia or grapeseed)
  • 140g coconut cream/milk
  • 250g plain flour
  • 1 tsp bicarb soda
  • 2tsp cream of tartar, or replace bicarb and tartar with 3 tsp baking powder
  • 80g brown sugar
  • 1 1/2 tsp cinnamon powder
  • 1 tsp ground ginger
  • 1/2 tsp Nutmeg
  • 1/2 tsp allspice powder
  • 120g sultanas

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipe's preparation

  1. Preheat the oven to 180C and line a muffin tin with large muffin cases

    Mill the linseeds 10 secs/sp 8

  2. Quarter and core two apples (I left the peel on) and chop 6 secs/sp 4

  3. Weigh in oil, coconut milk and sugar into the mixing bowl. Add the egg and mix 10 secs/Counter-clockwise operation/sp 3

  4. Scrape down the sides of the bowl and then weigh in the flour.  

  5. Add bicarb, tartar, spices and sultanas and stir 30 secs/Counter-clockwise operation/sp 2

  6. Spoon into muffin cases and bake 20 minutes
